Drank under the name of Cuvée du 4ième Anniversaire which was its near identical predecessor. Hazy golden beer with orange shine, well carbonated; whipped-cream like head, irregular. Superb fine hops nose, combined with honey, honingbollen and nectar-laden blossoms. Phenomenal combination. Again honey, with a very hop-bitter finish. Superb balance, superb combination. Some citrus (hoppy ), tad metallic. Light, superb session beer. WOW! This is pure genius. MORE! More, please, Grégory...

Labelled tripel, but kinda saisonish. Cloudy golden, large foaming head. Enticing aroma, one that invites repeated sniffing. Perhaps some coriander or others spice, honeyed malts, light phenols, overall fairly complex nose. Somewhat sweet up front, giving way to a light banana-ish phenolic middle. Finish is herbal and spicy, with lingering notes of possible black pepper or coriander. Semi-dry to dry. Smooth and quite drinkable.

On draught at Redbones, June 2005. Very hazy gold and light copper toned beer, with fine bubbles rising and a medium-sized white head, lightly creamy, well-retained with ample lacing. Aroma is very spicy! Rustic, farmy, hay-like hops add a zesty, pleasant spiciness, while light honey and grains make their way in. Dry apricot and nectarine notes, some brief hints of tangerine and a dry, dusty yeastiness. Flavor is moderately sweet, with good malt-extraction, plenty of spicy hops, though not terribly bitter. Light hints of sour wheat on the end, coriander, delicious yeastiness and a full-on grass flavor lingering. Mouthfeel was spot on in my sample, miniscule bubbles provide an invigorating, yet low carbonation, while the malt provides ample body, with no thinning. Alcohol is not noted. Baked wheat bread, honey and light nectarines/tangerines linger, with some dry herbs.
