Valkyrie Brewing Company is regionally significant because it was the first microbrewery in Northwest Wisconsin. We started the brewery 20 years ago in Dallas , WI. For many years the brewery was called Viking. In 2010 we sold the Viking trademark to a brewery in Iceland and changed our name to Valkyrie.
Many people ask us, why Dallas? That's an easy question to answer. Because of the water! The water here in Dallas is so soft that it allows us to brew any style of beer. Through the years we have brewed over 38 different beers of our own plus a large number of contract brews. We LOVE beer!
Dallas may seem like it is in the middle of nowhere, but it really isn't. It is a short jaunt from the Twin Cities and is located along a shortcut from there to Northwest Wisconsin's vacation land. We are only 10 miles off of Hwy 53 and 12 miles north of Hwy 64. It is a beautiful drive no matter which way travel to Dallas!

Good aroma. Honey, maple syrup, caramel. Brown with a small head. Very dark orange. Flavor of malt. Somewhat sweet; not as sweet as I like and expect for the style. Thin. Finish is somewhat sweet also, but light, bitter hops coming through as the beer warms. Also gets sweeter and richer.

Very dark brown colour. The aroma is chocolatey. Flavour is chocolatey as well, but also slightly hot, with a hint of roasty acidity coming in late. Roast character is mild and unconvincing. Oh well, it seems popular enough - just not for me.

Thanks to Probiere who brought this to add to the lineup in KP’s cellar at the Se Gathering! Big head that rises above a clear ruby tinged brew that doesn’t quite go to a complete blackout. Aroma is a bit weak. Sweet with a touch of sourness at the finish. Needs a little more intensity if it wants to run with the big boys.

Badgerben called this one right. Standarb bock aroma. Flavor is sweet with a syrup texture. Flavors of cereals. Rather thin. nearly flat, with a dark brown color. I wonder if there was a problem with the seal on the bottle?

Brought to MrFacto’s ’Tosa tasting by DavidP. Deep chestnut brown body with red highlights, thin tan head. Somewhat buttery aroma with coffee beans and roasted malts. Strange flavor profile, opening with unexpected grassy, floral hops imparting an unusual herbal character to the roasted malts, coffee, and cocoa. Just a touch of butter showed in the flavor as well as the aroma. Rather thin-bodied with tight carbonation. An interesting twist on the style.

Nearly black beer; yellow-brown head, dwindling. Bitter chocolate nose, seom wood, brandy or French coffee. The coffee tout-court then gets the upper hand. Bitter coffee taste, quite bitter for a beer responding to another bitterness than hops; there’s some brandy-soaked wood and some tobacco ash in the background too - some roasted grains. Reasonably bodied, but not full MF. There’s a little thinnish edge I link to the stout acidity. Why Swedish? If it really differs somewhere, is in that it misses a bit of mouthfeel, as well as some complexity.

It was hard to classify this between sweet stout and spiced. The pepper is so prominent I decided spice was the best category. The aroma starts like an oatmeal stout, then chocolate followed by the pepper. Thick and syrupy, black. Flavors of chocolate and pepper; enough for a small burn on the back of my throat. Different for sure, but overall the pepper and chocolate work. Heavy palate, similar to the big swede. Kind of gritty from the cocoa. Like this beer or not, the innovative spirit of Viking is something more brewers should have.

A pitch black beer with a disappearing tan head. Both the aroma is sweet with strong lovely notes of chocolate and coffee. A great Imperial Stout.

I expect good things from this brewer but this beer exceeded by expectations for a dunkel. Red color. Lots of fruit in the flavor, but not too much sweetness that ruins so many dunkels. Finishes light and clean. Good stuff.

Dark copper color. Flavors of fruit and sweet malt. Several of Viking’s beers have a common fruit taste in varying degrees, and it usually helps to make a good beer. Heavy for the palate and darker than I expect from a Bohemian pils. Another quality product from Viking.
