Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Slender, corked 750 via Press online. What a long route it's taken to get to me. Few weeks in the fridge. Mojito glass at home. No vintage.
Pale gold, intentionally still. Decent clarity.
Earthy & sharp nose, unripe fruit, sour apple, touch of white grapefruit was unexpected but cool.
Nice acidy, citrus kick upfront. Hay. Lemon. Feels like this is mostly sharps with just a hint of tannin & earth on the drawn out finish. Probably missing one more note for complexity sake.
Slight oiliness is a plus. ABV is a little low for a still.
Good slosh.

375ml via Press online. Week in the fridge, now I'm impatient.
Medium pale, slight gunk, yeasty bits, quick soda head.
Sharp, twang, white grape, sweet flesh nose.
Super intense Bartlett-like flavor. Twangy muscadine, lemon, floral, vinegar, slight funk.
Sharp carb falls immediately, leaving it a little soupy. Muddled texture but it ends with some dry-ish pithiness.
Tis okay.

Can at home. Ruby pour. Nose is apple and red wine grapes. Tatsss of crabapple, grass, vino, wood, cherry. Medium bodied. Dry but fruity.

Refrigerated 375 mL clear bottle poured into a glass. Clear golden. Aroma is rich apple, medium body body, and slightly syrupy texture. Taste is rich apple and some honey.

Vintage 2014. Definition of decadent. Concentrated apples, sweet and moreish, caramel, honey, fresh apple, toasted sugars. Full bodied, subtly oily. Lightly warming finish, sweet but not quite cloying, more delicious sugary apple. A shot of this is, pound for pound, probably more satisfying than almost any other beverage.

Sample courtesy of Grumbo. Cheers! Aroma of sweet cooked apples, sugar and apple pie. Very smooth mouthfeel. Sweet taste with hints of honey as advertised, white grape comes through. Enjoyable.
