Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Pours a rich mahogany red from a bottle. Oaky aroma combined with vanilla, alcohol, apple for sure, caramel. Similar flavor, sweet and tart. Very good cider.

Bottle thanks to Hunter. Pours a dark amber with small beige head that lasts. The aroma is strong apple pie, pure sugar, honey, booze. Slick body, similar flavors to nose, nice sweetness, enjoyed this.

Moderate sweetness and tartness with a slight salty edge. Moderate body, average carbonation. Nice sour notes to finish. Good.

750ml bottle from Cider is Wine. Pale yellow gold colour, white foam head that dissipates to a thin layer and aroma of cheese rind with some apple. Taste is tangy, tart, apple, fruity & fleshy, citric, acidic. Slick mouthfeel, medium bodied, medium to high carbonation, very tart & dry finish. Nicely drinkable.

Aroma of sweet apple, apple pie and vanilla custard, biscuit, caramel, slight woody funky notes. Medium plus sweetness and light to moderate tartness. Medium body, oily texture, average carbonation. Sweet sugary apple finish. Enjoyable.
