Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

6/8/2021. Bottle sample courtesy of danlo, cheers Ed! Pours cloudy pale yellow gold with a small bubbly white head. Aroma of fleshy apple, citrus, touch of peach. Medium sweetness and light bitterness. Moderate body, soft carbonation.

375ml bottle pours out golden no head. Nose is big sweet apple some barrel and spice. Taste is more of the nice sweet apple honey barrel spice kick.

355ml can from Cat in the Glass, for July 2021 Manchester Cider Club tasting. Bright pale yellow gold colour, short-lived bubbly white foam head and aroma of mellow pasty apple. Taste is sweetish, apple pie, pastry note, juicy apple, alittle core, with peach & nectarine hints, and some mellow acidity. Medium bodied, medium carbonation, dry finish. Nicely drinkable

355ml can from Cat in the Glass, for July 2021 Manchester Cider Club tasting. Slightly hazy pale yellow gold colour, short-lived white foam head and aroma of fruity apple, fleshy, woody. Taste is light tart, tangy apple, fleshy & fruity, peach hint, musty, with some citric acidity and alittle tannin. Medium bodied, fine carbonation, dry finish. Nicely drinkable

Pours a clear pale golden yellow from a bottle. Nice light crisp apple aroma, a little flinty. Dry, with a tannic finish. Could very much imagine it going with black bean soup as recommended. Good cider.

Pours a wonderful deep amber golden brown from a bottle. Rich apple, oak and vanilla aroma, that mixture of brown sugar and melted butter when baking. Similar flavor, very sweet with a bright tartness. Great cider.

Pours an opaque mahogany from a bottle, still. Aroma is big, raisins, dried apple, heavy vanilla and oak. Very sweet yet a bright acidity throughout. Very good cider.
