Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

75cl bottle from Scrattings, shared with Soph. Generally clear gold with a persistent white ring of foam. Aroma of crisp crunchy apple fruit. Taste is similarly crisp with a lovely blend of dry apple fruit, some nice juicy moments, and hints towards cognac barrel-aging, though this will be from the fruit. Delicate carbonation. Very good.

Pours a dark golden amber from a bottle. Sweet apple pie aroma and flavor. Not as nuanced as some of their other ice ciders but still damn good. Very sweet. Pretty good cider.

Sample thanks to Danlo! Pours a clear pale yellow. Aroma of sweet apple fruit, varnish hints. Taste presents a light carbonation with sweet fleshy moments, green apple. Fairly simplistic, dry, a little oily with floral moments and faint hints of elderflower. Ok.

Sample thanks to Danlo! Pours clear golden yellow. Aroma of sweet apple fruit, apple pie, sugar. Gently carbonated. Vibrant sweet crab apples, green apple, skins, oily on the palate, some floral notes with a subtle tannin presence. Nice medium sweet cider.

Sample, thanks to Danlo! Pours a deep mahogany, aroma is intensely sweet, some overipe dark fruits, currants, oak varnish. Taste continues along similar lines, exceedingly sweet with strong port and dark fruits emerging, varnish, toasted oak, burnt brown sugar, rich toffee apple. Syrupy on the palate. Nice depth of flavour.

Pours a nice clear but very dark amber, approaching copper, from a bottle. Rich apple syrup aroma, great balanced acidity and tannins, very sweet. Great cider.

Moderate sweetness, tartness and body. Oily texture, spritzy carbonation. Bittersweet and tannic finish. Enjoyed this.

Aroma is rich and complex, gently boozy, apple pie, dried fruits, blackberry, toffee, biscuit, hint of coconut husk. Medium sweetness, moderate vinegary tartness. Full body, sticky texture, very soft carbonation. Thick, tangy, tart finish. Delicious.

Aroma of medium sweet apple, vanilla, touch funky and yeasty, with some sweet crème brûlée. Medium sweetness, moderate tartness. Moderate body, oily texture, spritzy carbonation. Bittersweet and dry to finish. Nice.

2,100th US rating! Pours a rich clear amber from a bottle. Very nice apple pie aroma, light vanilla note, apple peel. Similar flavor. Starts off very sweet but neither sickly nor syrupy. Sweetness quickly fades to a pleasant but light tartness in the finish, a nice quick journey. Great cider.
