Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Dessert! Lovely ice cream cake, with this ice cider. Tastes like good dessert wine, but appley instead of grapey. Sweet, complex, warming, yet pretty gentle. Lots of wood, nice amount of apple, and not sticky sweet. Barrel is there nicely. Fun!

Pours a clear golden straw color from a bottle, rich syrupy aroma of honeyed apricot and grapes. Similar flavor but with a light vinegary tartness on the finish which really adds another chapter to the experience, tangy, light and sweet, trending toward being cloying in the sweetness but with the tartness it is a beautiful thing. Excellent cider.

Poured from 750mL bottle. Clear amber with minimal off-white head. Basil and pepper, bitter cranberry notes. Pretty interesting, but not my thing.

Pours a slightly hazy dark straw from a bottle. Mixed apple varieties in the nose and mouth, slighty yeasty funk, a little cheese? Acidic finish. Some sweetness up front but edges drier. Good cider.

Pours a hazy dark amber from a bottle. Crisp, clean sweet apple aroma. Similar flavor, bright acidity, some minerality. Semi-sweet. Pretty good cider.

Draft. Crystal clear yellow color. Very crisp, dry, subtle soft apples, pears, clean dry texture. Refreshing!

Thin, crystal clear yellow no head. smells clean crisp, ripe apple. taste is very palpable, nice carbonation, thin mouthfeel at the finish and not overwhelming, a cider that anyone would enjoy, with bits of pear and walnut flavors.

750 ml bottle shared Adamchandler. Nice effervescent across the mouth. Crisp texture, super dry finish. Apples, fresh juice, some yeast, Washington like apple. Real fresh. Nice!

75CL capped, just picked this one up. super stoked. pours a golden 1 finger, slightly hazy. aroma is perfect. this is possibly the best sparkling cider eden has made. I can tel it's super dry with a lot of fresh apple aroma. yheap. delicious. insanely dry, I love the light puncheon flavor. pear an d apple. delicious.

Pours a somewhat hazy mahogany from a bottle, still. Big port aroma, toffee, vanilla, oxidized wine, vinegar. Very tart, sweet and vinegary, slight apple finish but the aging really shines here. Great cider.
