Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Pours a clear straw from a bottle, still. Aroma of apple, light lemon, some vanilla and caramel. Similar flavor. Dry but a very faint residual sweetness. Good cider.

Pours a clear gold from a bottle, fair amount of carbonation. Crisp apple aroma, tannic, dry, a little musty. Good cider.

1,900th US rating! Pours a lovely clear gold from a bottle. Crisp green apple smell and flavor. Oily mouthfeel, sweet, lingering syrupiness dissolves into a slight medicinal bitterness. Very good cider.

Pours a wonderful glowing gold from a bottle, lightly effervescent and clear. Aroma is sweet yet also medicinal, like a bottle of aspirin. A little mushroom like. Sweet, syrupy but with a lingering bitterness, even some funk like a washed rind cheese without the salt. Good cider, interesting.

Can from Covenhoven. Bad Seed tulip. Pale, clear, mellow gold. Smells of acidic apples, cute tropicals, medicine. Taste is somewhat sweet. Pineapple, fleshy apple, bitter grape skin, core. Okay acid, becoming biting. Lightly bubbly, but not as hard as I was expecting. Slick finish. Mellow & okay.

1/12/2019. Bottle, sample, courtesy of danlo, cheers Ed! Pours clear pale gold with a small bubbly white head. Aroma of sharp green cooking apple, sweet baked apple, apple pie, brown sugar and a touch of caramel. Lovely sweet and tart mix to taste. Medium body, sticky texture, average carbonation. Really enjoyed this!

750ml bottle from Scrattings. Golden colour, white foam head that quickly dissipates away and aroma of juicy apple, apple pie, caramel. Taste is tart & then sweet, apple flesh, alittle green apple, with pastry & caramel notes, and boozy. Slick mouthfeel, medium bodied, fine carbonation, dry tangy tart & tannic finish. Interesting, nicely drinkable.

75cl bottle shared with Soph on her birthday. Pours clear gold, rich concentrated apple fruit on the nose, caramel, stewed apple. Crisp on the palate, fine carbonation, extremely rich, almost unctious caramelised apple fruit, green apple, apple core with lingering racy acidity.. good stuff, fairly boozy and definitely comes across as a rich concentrated ice cider more than anything else. Decent.

Bottle: Poured a golden with no head. Aroma is sweet apples and light spice, cinnamon. Taste is diabetes sweet sugary apples, my teeth hurt. Delicious!
