Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

750ml bottle from Scrattings. Sparkling yellow gold colour, short-lived fizzy white foam head and aroma of fruity apple, citric, light funk. Taste is fleshy apple, melon, mellow citric, tart and woody, vanilla, with some tannins. Medium bodied, spritzy carbonation, dry tangy tart & tannic finish. Nicely drinkable.

100th VT rating! Pours a lovely clear golden straw, small bubbles slightly effervescing. Nice apple, toffee aroma, slight oxidation and yeast notes added in the mouth. Crisp and dry but with a faint residual natural sweetness. Good cider.

Pours a lovely golden amber, ever so slightly hazy and unfiltered, near still, glass shows some slight carbonation. Nose is a combo of floral notes with a lot of wet basement. Similar flavor, mineral-y notes. Only a residual sweetness, very dry, tannic. Not picking up on oily mouthfeel as others have mentioned. First glass was bracing, but immensely drinkable. Pretty good cider.

Pours a nice rosé blush from a bottle. Rich earthy aroma, red berry flavor, nice clean apple, semi-dry. Pretty good cider.

Bottle shared in London - big thanks to Nathan. Pours unclear yellow with a touch of white foam. Lovely funky dryness, a little tang, semi-ripe apples, moderate sweetness. Medium bodied, fine, airy. Balanced finish, a little dry.

750ml bottle from Scrattings. Fizzing pale yellow gold colour, white foamy head that dissipates to a thin rim and aroma of fruity apple, apple pie, some caramel & vanilla notes. Taste is tart, apple, with notes of apple pie, vanilla, caramel, and slick, citric, tangy, bittersweet tannin. Medium bodied, spritzy carbonation, very dry tangy citric acidic tannic finish. Nicely drinkable.

750ml bottle from Scrattings. Orangey gold colour, white foam head that quickly dissipates away to a thin rim and aroma of baked apple, caramel, light funk. Taste is tart apple, tangy woody funk, bittersweet, tannin with citric notes. Slick mouthfeel, medium bodied, light carbonation, dry tart finish. Nicely drinkable.
