Description
Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.

Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

375ml bottle from Scrattings. 10%. Batch #2014NS101. Amber brown colour with a reddish tinge, afew bubbles on top and apple strudel pastry aroma. Taste is sweet, fruity apple, apple pie, syrupy, with concentrated dried fruits, vanilla, some woody barrel spicy boozy notes and drying earthy tannins. Oily mouthfeel, full bodied, low carbonation, dry finish with lots of residual sweetness. Very sippable

Blond colour. Sweet, very good apple juice, the alcohol is a bit too evident, final astringency, touch of vanilla.
Not complex, but a good drink.

187ml (6oz?!!!) bottle at Erik's. Pours a clear golden with no head. Aroma is sweet with apples, some vanilla, tanins and spices. Similar taste. Nice one.

Golden colour. Not really getting a lot of legs on this. On the nose, brown sugar, and a fair bit of apple. Lots of apple, with a light, vibrant body.

8 3 8 4 17Bottle shared at Sunday Brunch Bee Boost. Clear amber with no head. Aroma of sweet red apples, woody notes and apple core. Flavour is heavy sweet. Medium to full bodied with a dry finish and soft carbonation.

Bottle pour, picked up at The Garden Path, Burlington. Perhaps my first taste of an American Ice Cider? First barrel aged Ice Cider as well? If so, it's a good start. Shiny copper pour, clean. I agree with Matt, in that it's not as dense as others in the cider substyle, but it remains an incredible cider. Drinks really nice. Perfect taste for the season.

Amber colour, bright. Lovely character of stewed apples and caramel, the aroma is intriguing, the flavour is less complex; balanced acidity; a bit short in the final; there is some astringency, and strong alcohol too.

375ml bottle at Josh&Sunshine place. Clear copper. Aroma is very smooth with sour and sweet red apples. Similar taste with noticeable American oak notes. Good one.
