Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Bottle at tasting. I'm moving up the sweetness list. Apple skins sweetness. Some light alcohol heft at the end flavor that helps balance and adds the sipping component. Again, I started with a very sour cider and this makes me feel good.

187 ml bottle bought at the Northeast Kingdom Tasting Center, Newport, VT, last July. Clear dark golden in the glass. No head or sparkling. Strong complex apple smell. Taste starts sweet, strong fruity, something like caramell, very balanced, little bit oily. Very smooooth. Great!

On tap @ Wassail for NYC Cider Week. Wine glass pour. Clear, ruby on brown body. Smell is husky & very sharp with raspberries & plum. Taste is tannic/bitter grape skin & macerated berries. Moderate apple acidy, but otherwise they are losing this battle. Strong, viscous, dry, lingering bitter finish. Harsh, but genuine flavor. Over carbonated. Maybe it smooths out in the bottle.

Bottle shared at Leighton's place, 23/11/2017. Huge thanks to Leighton for this one. A bright clear bright golden orange coloured pour with a . Aroma is sweet, sugary, blueberry muffin, glazed doughnut, . Flavour is composed luscous sweet, apple, nectar, tart apple, jammy strawberry, tangy. Palate is thick and sugary, tangy, moderate carboantion. Tick and sticky, apple pie, lovely.
