Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Bottle pour at VT cider tasting at Wassail. Earthy funky nose of tart apples. strong apple flavors on the slightly tart side, crab apples. bittersweet, tannic and dry and funky. still bodied more British style in my opinion.

Bottle pour at Wassail part of VT cider tasting. lovely slightly amber golden pour. nose is fresh crushed apples, light caramel, and melon. Tastes of sweet cooked apples, fresh apple juice, pears, melon, honey, caramel, and sugary. rich syrupy mouthfeel. nice

Bottle received through the Eden Ice Cider club. Clear deep golden pour with nice legs. Big apple caramel aroma. Vanilla and calvados. Sweet and balanced fruity sour. Viscous round tart mouth. 75cl bottle pours a hazy greenish gold, no head. Nose is straight forward, apples, apple skins, yeast. Flavor is tart and sweet, mildly juicy, all apple. Off dry finish. So so.

3oz pour at Anxo is a dark gold with no head and light legs. Nose is quite enjoyable, heavy apple juice, some apple sauce, mild pie spices, light booze, heavy honey comb, compote. Flavor is apples, pears, some canned stone fruit, caramel, a little bubblegum, mild cake/caramel, some riesling. Full bodied, oily, sticky finish. A real treat.

375 ml bottle. 2013 tag. Nice, fancy bottle. Bright amber, quite clear. Rich apple flavor with big caramel sweetness. Some oak in it. Mild brandy, more of a deep grape-iness. Light hit of cinnamon, some vanilla, honey, a little peach. Quite sweet. It’s not really a negative but there’s more sharpness than expected, a barrel-ish oaky brandy flavor with some wine-like acidity. Some decent viscosity to it. Long finish with a lingering oak bitterness. It’s a very rich flavor, though still lacks the depth of the top tier ice ciders.

Tap @ ANXO, Washington, DC. Pours oily pale golden with no head. Clear aroma of semi-sweet apples and mild notes of fermentation. Tart and crispy flavour with mild sweetish notes and hints of fermentation. Rough and vinous aftertaste, slightly burning with time. Medium, natural carbonation. Warming alcohol presence. Good.

Bottle pours at ANXO. Pours clear pinkish orange, no head or lacing. Aroma is apple, red apple all the way. Fully sweet and super rich apple flavor with oaky highlights. Light plus body, hint of tartness as well. Nice sipper.

Taster @ANXO. Pours clear pale golden, no head or lacing. Aroma is fruity, perfume, funky, musty. Flavor is very light sweet, medium funk. Light body, no carbonation. I liked it.
