Established in 2015
The project comes to life at the former warehouse of the Empire du Malt, in Aubière. Justin brewed alone, by 120L and did everything by hand. After two years of hard work, the Microbrewery was created in 2016 following the move from the Empire to Brézet. A typically American concept therefore appears: a Brewpub!
Thanks to the purchase of materials, the production and multiplication of varieties of beers increases. Mid-2018, the microbrewery encountered a new turning point, production was at its peak and all products were sold. The training of a new brewer becomes necessary: Benoit!
At the end of the same year, after 6 months of work, Grizzly went from 750L to 20,000L of brewing. This represents 15,000L of beer produced per month; we are now a long way from producing Justin's p'tite cuisine four years ago! To ensure the proper functioning of production, a third person becomes necessary for the Micro-brewery, Pierre-Emmanuel therefore joins the adventure in mid-2019.
In the months and years to come, Grizzly wants to create more different styles to feed the Brew pub and their different partners (L'empire du Malt Gerzat, Délirium Café etc…).

330ml bottle from the brewery in Merville. Pours a deep, unclear brown, minimal off-white sheet of bubbles atop. Aroma of sweet sherry, inviting caramelised malt. Harmonious favour profile with integrated pineau sherry that works wonders with the sweet wee heavy malt.. excellent, nicely done.

Strasbourg Craft Beer Fest. Clear golden beer with a white head. Aroma of yellow stone fruits, apricot, pine. Taste of grapefruit, citrus hops, pine, long bitter finish.

Draft. Bit hazy amber to red. Roasted malts, light woody, raw cocoa beans, a hint of red currants, dry cassis leaves. Dry and earthy overall. Under medium bodied.

Draft at Le Grognon. Hazy yellow golden. Fruity and full of oats, bit also bitter and grassy with even a bit of spruce. Medium sweet and a bit more bitter. Decent.

Tap at le Grognon. Clear golden. Citrus hops, caramel malts, spruce, sweet crisp malts, orange zest. Medium sweet and bitter. OK.
