Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

0.33 l bottle thanks to Marko who brought it from Prague. Shared with Ogi and him. Dark ruby red, minimal head. Aroma is acidic, sour dark cherries, some vinegar. Light Brett presence? Cheese, dust. Light phenols in flavour, glue. Cherry juice. Tart. Quite sour. Puckering, a heavy acidic bite in the finish. Gentle red fruit lingers. Wonderful sourness.

Bottle from Base Camp. Lovely red body, pinkish head, gone fast. Tart, funky aroma, big cherries, cherry vinegar - if that exists. Very pleasant, dry, balanced taste, cherries dominating, fresh, tasty, the sourness is not overdone. Juicy, tasty, the most impressed I've been with one of their beers, beating hands-down most Belgian examples I've had.

Bottle @ Jacobs. Pours slightly hazy dark brown with a creamy tan head, light lacing. Aroma of malt, light sourness, wood, light spice, light earthy, tannins, red grapes. Flavor is lightly sour, malt, wet wood, little balsamico, light spice, red grapes, tannins. Thin to medium body, soft carbonation, dry and light acidic finish. 171119

Tap at Dno pytle. Assertively lactic, yogurty. Loads of sour cherries too and by loads I mean loads. Genuinely finishes with a raw natural sour cherry taste. Very well balanced, very easy drinking. The overall complexity is not too much, not too little. Great!

Tap at Dno Pytle. Dark ruby body, pinkish head. Smooth creamy aroma with waves and blasts of cherries floating above some light funk. Lovely aromatic Maraska-style cherries, light touches of glue, only minimal tartness, don't think this is a sour - it's sour cherry as a fruit. Veeery well hidden alcohol. A bit lean too. Excellent beer!

03-11-19 // bottle shared. Vintage 2016. Damn. What is this? Totally unexpected taste but wow. Lovely. Rich sweetness. Soft brandy with raisins and grape resinous note. A dark wineous acidity. Caramelized sugars but so well balanced. Well done.
