Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!

Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.

At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Bottle @ Højbjerg tasting. Nice head with good duration. Color is red. Aroma and taste are cherries, marzipan, funk, brett, fruits, malt and hops.

0,1l from tap at Craft Bier Fest Wien. bourdeaux like color, small off white head. smells milky, yoghurt, marzipan, nutty, berry notes, bit herbal. nice smell. medium to full body, soft carbonation, slick mouthfeel. tastes milky, grassy, peppery, some fruits, herbal, bit medical. finishes medium bitter and lightly sour with notes of grass, milk and fruity notes. nice one overall but balance is not that great. overall rather drinkable.

0,1l from tap at Craft Bier Fest Wien. bourdeaux like color, small off white head. smells musty, grassy, citric, light green apples, light wood, some funk. very nice smell. medium to full body, soft carbonation, slick mouthfeel. tastes grassy, citric, light green apples, funk, peppery, bit nutty, light wood. finishes medium sour with notes of wood, grass and some funk. very nice one, quite grassy / citric sour but very smooth beer.

Deep red body, with a medium, creamy, lacing, light pink head.
Aroma of sweet-sour cherries, cheese, barnyard, vinegar, apples, pears, some unripe fruits.
Tastes pretty similar.
Medium, slick mouthfeel, with a lively carbonation.
Finishes sour, a bit sweet, a bit dry, fruity, with cherries, pears, some vinegar.

Very nice. Pretty straight, with lots of cherries and some vinegar like sourness. I like the nose more, which has more depth. Very solid cherry Lambic, but not among the best I’ve had.

Dark ruby body, with a small, beige to pink head.
Aroma of red wine, sweet grapes, sweet berries, moderate funk, apples.
Tastes quite similar, a bit less sweet, with some more unripe pears.
Medium, slick mouthfeel, with an average carbonation.
Finishes medium sour, medium dry, subtly sweet, a bit vinous, fruity, with unripe pears, apples, grapes.

Tasty. Very fruity, with a well dosed sourness and also quite sweet, especially the rich nose. Lovely vinous grape notes throughout. Not a traditionally tasting Lambic maybe, but really lovely stuff.
