Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!
Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.
At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

330 ml bottle into tulip glass, no bottle dating. Pours slightly hazy/cloudy golden orange/amber color with a 1-2 finger fairly dense and fluffy off white head with great retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big tart lemon, lime, peach, pear, pineapple, cherry, berry, green apple, melon, white wine, hay, straw, grass, oak, pepper, wheat, cracker, and white bread dough; with lighter notes of honey, caramel, oaken vanilla, leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, bready malts, and wine barrel notes; with great strength. Taste of big tart lemon, lime, peach, pear, pineapple, cherry, berry, green apple, melon, white wine, hay, straw, grass, oak, pepper, wheat, cracker, and white bread dough; with lighter notes of honey, caramel, oaken vanilla, leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Light-moderate lactic tartness and yeast/wine tannin spiciness on the finish. Lingering notes of tart lemon, lime, peach, pear, pineapple, cherry, berry, green apple, melon, white wine, hay, straw, grass, oak, pepper, wheat, cracker, white bread dough, vanilla, light funk/vinegar, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, bready malts, and wine barrel flavors; with an awesome malt/tartness and yeast/oak spiciness balance; with zero puckering/astringent flavors after the finish. Light-moderate increasing dryness from tart/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately bready/grainy/acidic/tangy/tannic, and fairly crisp balanced mouthfeel that is great. Zero warming alcohol as expected of 4.8%. Overall this is an awesome wild ale! All around great complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, bready malts, and wine barrel flavors; very smooth, crisp, and refreshing to drink with the modestly acidic/tangy/tannic/drying finish, not overly lactic. Really impressive well rounded Brett/Lacto complexity; great malt balance and wine barrel presence. Kind of Gueuze-like as it is a blend of young and old beer. A really enjoyable and well made offering.

At a tasting, many thanks, very little head, light cloudy lightish red color, aroma of wood and vanila, red wine vinegar and some funk, flavor of red fruits, vanila and a bit of spice, quite tart but mellow and nicely balanced. Really good and enjoyable.

[ As Wild Creatures Tears of Saint Laurent ].Clear medium amber red colour with a small to average, open and frothy, fair lacing, mostly lasting to diminishing, off-white head. Aroma is moderate grapes - lemon, cherry, marzipan, tart fruit, barnyard notes. Flavor is moderate sweet with a long duration, grapes, cherry, marzipan, sour - tart.
