Fly with me – apricot is spontaneously fermented beer with our own apricots. You could hardly find more typical local product than apricots. We wanted beer that reminds you the summer – juicy, aromatic fruit with warming rays of sunlight. It is very complicated to brew apricot beer. That’s why it is just a limited edition. We do believe that you enjoy our apricot beer as much as we do.

We use pale malts and unmated wheat when brew the base beer. In the open vessel we inoculate the wort and pump it into barrels afterwards. “Fly with me” is spontaneously fermented beer aged for months (sometimes more than a year). We do not use lab-derived yeast; it is 100% local microflora. Apricots are picked manually. The proper time of harvest is essential. Apricots must be well ripe - so ripe, that they would not survive any transportation. We have to process them immediately. And this we can do only thanks to our own orchard. We add into beer whole fruit (the ratio is 20%) and let it ferment and age for months.

When you pour the beer, first you will feel strong apricot aroma. Full, true, fruity taste accompanies harmonic acidity.

Bottle from Lya. Pours murky orangeish copper with thicc head. Nose is messy funk and light fruits first, but with time it actually gets much much smoother and refined, the fruity touch is highlighted better and in a more elegant way, and the funk becomes less offensive. Taste is big funk, barnyard and acetic acid (which also becomes more restrained with time) with a big fruit punch. It’s not that classic refreshing sweet kinda fruit tho, but fits the beer nicely. Closes with low to moderately sour finish, has light to medium body and average to high carbonation. Noice.

Bottle 0.33l from our archive, three years aged. Cloudy, amber colored. AROMA- apricot, a bit vinous, sweet to flowery, slightly sharp sour tones. FLAVOR- slightly sweet, moderately sour and tart, sour tones, apricot, flowery. Fuller bodied. Great.

RBESG 2019 Grand Tasting. Pale brownish golden colour, small off-white head. Obvious oxidation, not on a completely pleasant side, wet cardboard, wood, caramel and sugar. Flavour is acidic and tart, corked white wine, unrefined. Lacks fruity character. Medium body, moderate carbonation, moderate finish. Seems lost in the process.

Bottle from Pivný raj Quite nice apricot feel. Light sourness, sweetish line. Nice lambic.

Nice stuff. Refreshing, tart more than sour, lots of apricot. Good spritz. Creamy! Strawberries and cream sweet but substitute apricots.

Bottle @ Home. Pours slightly hazy dark golde with a fading offwhite head. Aroma of malt, light sourness, oak, sweet, fruit, cherry, apricot. Flavor is light sweet, light sour, malt, oak, light vinegar, tart and light sweet fruit, apricot. Medium body, average carbonation, dry and light acidic finish. 101019

Bottled 330ml. - Grand Tasting RBESG 2109, day 4. Almost amber coloured, small to medium sized airy white head, sweet apricot and cellar like nose. Sweetish/acidic apricot taste with light notes of caramel and some sticky notes in the finish.

Bottle shared with friends in Warsaw-Poland. Pours orange/amber clear with an unexpected ivory foam. Nose: macerated apricot, oxidation with Malvasia wine feel. Mouth: frizzy carbo, moderately sour sweet with ripped fruitiness. Nice.
