Fly with me – apricot is spontaneously fermented beer with our own apricots. You could hardly find more typical local product than apricots. We wanted beer that reminds you the summer – juicy, aromatic fruit with warming rays of sunlight. It is very complicated to brew apricot beer. That’s why it is just a limited edition. We do believe that you enjoy our apricot beer as much as we do.
We use pale malts and unmated wheat when brew the base beer. In the open vessel we inoculate the wort and pump it into barrels afterwards. “Fly with me” is spontaneously fermented beer aged for months (sometimes more than a year). We do not use lab-derived yeast; it is 100% local microflora. Apricots are picked manually. The proper time of harvest is essential. Apricots must be well ripe - so ripe, that they would not survive any transportation. We have to process them immediately. And this we can do only thanks to our own orchard. We add into beer whole fruit (the ratio is 20%) and let it ferment and age for months.
When you pour the beer, first you will feel strong apricot aroma. Full, true, fruity taste accompanies harmonic acidity.

Sampled @De Bierkoning during Carnivale Brettanomyces 2017. Golden color. Apricot in the aroma. Bretty, citrus, floral. Sweet ’n sour flavor with apricot and elderflower.

RBESG 19. Clear nestea body, dark golden. Heavy malt and peach actually more than apricot in the aroma for me. Tart, heavily malty (for the style) body, some funk, peach jam. Huh. Weird indeed.

Bottle. Clear golden color with white head. Aroma is funky, not too much apricots, vineous, white wine. Taste is the same Oily mouthfeel with low carbonation. Weird, but ok.

Amber color with medium off-white head. Sour aroma with vinous notes, apricots. Taste, nice fruity sourness, apricot, some vinous notes, light caramel.

330 ml. bottle @ U Kunštátů in Prague. Finally Czech lambiek at long last. Amber orange, strange colour for the style, bubbles only one the side. Fruit is massive half dried apricots, with some butter (how young is this – BBF is 10/19). Fruit is amazing half dried apricots to the max but the butter, caramel, sweet pastry almost base is weird and zero funk here just butter and caramel, very tasty fruit helps it a lot, little carbonation. Very odd nice due to fruit but probably needs to develop a lot more.

Bottle shared with JMD and SM on board Fridtjofen 03.12.18. Slightly hazy golden. Small white head and lacing. Excellent aroma of both fresh and dry apricots. Similarly fine taste, with more complexity. Sour and dry mouthfeel. Good!

Shared 330 ml bottle. ABV is 5.9%. Orange colour, small white head. Aroma of sour apricots, hints of oak. Medium sour flavour of apricots, fairly dry. Hints of oak again.

Flaske (5,9% iflg etiketten) fra Holmens importkoffert, delt med skipsrederen og seremonimesteren 02.12.18 (juleverksted på Fridtjofen): klar dyp gyllen med ok skum. Vi hadde denne rett etter kirsebær-versjonen, og denne har mer fylde og kompleksitet i både aroma og smak. Aprikoser, vanilje, saftige gule epler og hint av eikefat. Syrligfrisk ganerenser med høy ff.

Tap at Zly casy. Med-high sourness, lightly acetic. Loads of apricot, very fresh and natural feeling. Much better than cherry - far better attenuation, less malt character, more apricot and most of all moderate carbonation, which makes it easy to drink. Very good.
