Description
Hi-Wire Brewing’s journey began in the summer of 2013 at their 2,700 square foot South Slope Brewery located at 197 Hilliard Ave in the heart of Asheville’s South Slope Brewery District. With the 2015 opening of their Big Top Production Brewery up the road, the original Hi-Wire brewhouse is 100% dedicated to brewing award-winning sour and wild ales and one-off small batch beers.

Brewing beers with a connection to the past is important to us. We love to brew traditional styles that honor the heritage of our craft and pay respect to those who have crafted beer before us. Yet, as an American craft brewer, we are elated to participate in the culture of experimentation that has developed here.

Sample at the taproom. Clear orange-gold color with a medium off-white head that recedes gradually to an outer ring. Strings of lacing. Aroma of funky tropical fruit, rye, hops and malt. Medium body with flavors of funky yeast, rye malt, earthy hops and fruit. The finish is mildly spicy rye and funky brett. Pretty good overall.

Sample at the taproom. The beer is a slightly hazy yellow-gold color with a thin white head that dissipates quickly to a film. Short strings of lacing. Aroma of tart fruit, funky yeast and malt. Medium body with flavors of funky brett, grapefruit and malt. The finish is funky with citrus and yeast aftertaste. Pretty good overall.

Clear golden yellow color see pic please. Aroma of lightly spiced sourdough bread. Taste is lightly bitter lightly tart lightly floral. Delicious.

Draft. Clearish golden amber color, white head. Aroma of citrus and pine. Taste is bitter orange, light resin. Nice.

Pretty much black color, brown head. Aroma of dates, figs on an espresso background. Taste is coffee, dark chocolate, dark fruit. Tasty.

Pour is a near black with a small tan head. Aroma is really not much. Some sugary malts with a hint of dark fruit. Flavor is sweet malt with again a ever so slight dark fruit . Some roast malt and alcohol follow up after the swallow. This was way sweeter than I would like a dopplebock to be. It was ok not great.

Pour is a black with a small tan head. Aroma is a real nice roasted cold pressed coffee. Flavor is more bitter coffee with a nice roasted malt left on the tongue. This was missing that silky sweet smoothness and body of most milk stouts but the coffee flavor is pretty intense.

Draft. Clear deep brown color, almost opaque, beige head with good retention and lacing. Aroma of burnt caramel, cocoa, dark fruit. Taste is sweet, boozy fig, date, caramel. Very tasty.

Heavy coffee acidity with a smoky undercurrent. Not too sure about the developing tartness--gives it a metallic unpleasantness that distracts from the strong coffee front. Finishes a bit light, slightly bitter with a mild mocha fade.

22 oz bottle. 2015 vintage. Opens with no pop whatsoever. Oily texture. Pours muddy caramel brown with a thin tan head. Light aroma of raspberry and oak. The flavor is light raspberry, lots of alcohol on a sweet, heavy, oily palate. The alcohol is too much for my tastes and the rest of the flavors aren’t complex enough to make this balance out for me.
