WEAVER HOLLOW IS A BREWERY MAKING SLOW AND NATURALLY FERMENTED ALES ON AN OLD CREAMERY IN THE CATSKILL MOUNTAINS. WE UTILIZE THE NATIVE MINERAL PROFILE OF OUR WELL WATER, ALONG WITH A HOUSE MIXED-CULTURE—AVOIDING COMMERCIAL YEAST ENTIRELY—TO PRODUCE BEERS THAT ARE TRULY REFLECTIVE OF THE LAND AROUND US. INSPIRED BY OLD-WORLD WALLONIAN FARM ALES, OUR BEERS ARE AGED IN FRENCH OAK BARRELS AND OFTEN FEATURE A RESTRAINED TARTNESS, BUT ARE ULTIMATELY DRY, DRINKABLE, AND REFRESHING. WE OPEN OUR DOORS ONE DAY A MONTH TO PROVIDE BOTTLES TO-GO, AND HOPE TO HAVE A TAPROOM OPEN WITH REGULAR HOURS THIS SUMMER.

750mL bottle pour, Tørst, 4/29/23. Chill haze. White head to ring. Oh yeah, huge funk and mineral. Light Muscat, good maceration not overdone. Stone fruit, juicy citrus. Light oak. Very elegant. Juicy grape, strong mineral and malt, good attenuation of both. Light oak and just a pinch of strong acidity in the finish. Very juicy. The grape almost overpowers but not quite. The extra malt depth helps a lot here. Stone fruit and white wine galore.

Tørst draught, 4/28/23. Batch 3. Clear, deep honey-hay. Frothy, bubbly, white head. Rich, almost herbal-like bacterial notes with strong rustic grains. Very much in the vein of Suarez and Hill. Some stinky funk which is incredibly endearing. Tea, herbs, spices but none actually in there. Very complex, clean, well-done. Soft, lightly juicy stone fruit up front with honey and freshly baked bread through the middle ending on spice, herb, vanilla and other oak. Soft, malty, dry. So lovely, funky and unique. There's a lot of good beer here in NYC.

The nose shows moderately intense notes of lime and light citric fruit mix with hints of coriander.
The palate is well carbonated and medium bodied. Lightly tart with mild acidity. Coriander forward through out.

Bottle from explosivedpg: pours gold with white head. Aroma is light citrus, winy, and woody notes. Taste is lightly tart, funky, deep and complex.

light golden color. Amazing, bright, effervescent, hay , that smells like white wine, hay and barnyard. Light body, low medium bitterness , nice with big carbonation. The hop character is so fantastic the yeast is so fantastic. Everything just works.

Bottle: pours slightly hazy with a white head. Aroma is super yeasty, hella fruity, tropical, punchy, funky. Taste is pretty tart, but not quite sour. Taste is super fruity, with a very long lingering aftertaste. Excellent.

Bottle pour at Gold Star Beer Counter. Pours bright yellow. Floral, peach skin, gooseberry, tart gooseberry, plum, tart plum flesh, slight herbal notes, bright minerally tartness, lime, light cracker, zesty citrus tartness, grapefruit juice. Light spritzy body. Outstanding.

Bottle, shared at Tørst. Pours bright glowing translucent orange. Lemongrass, orange zest, tart lime juice, intense floral notes, delicate white wine vinegar, lemon zest, bramble, pear skin, white raspberry, white grape, passionfruit. Light spritz. Excellent.
