WEAVER HOLLOW IS A BREWERY MAKING SLOW AND NATURALLY FERMENTED ALES ON AN OLD CREAMERY IN THE CATSKILL MOUNTAINS. WE UTILIZE THE NATIVE MINERAL PROFILE OF OUR WELL WATER, ALONG WITH A HOUSE MIXED-CULTURE—AVOIDING COMMERCIAL YEAST ENTIRELY—TO PRODUCE BEERS THAT ARE TRULY REFLECTIVE OF THE LAND AROUND US. INSPIRED BY OLD-WORLD WALLONIAN FARM ALES, OUR BEERS ARE AGED IN FRENCH OAK BARRELS AND OFTEN FEATURE A RESTRAINED TARTNESS, BUT ARE ULTIMATELY DRY, DRINKABLE, AND REFRESHING. WE OPEN OUR DOORS ONE DAY A MONTH TO PROVIDE BOTTLES TO-GO, AND HOPE TO HAVE A TAPROOM OPEN WITH REGULAR HOURS THIS SUMMER.

375mL bottle, pours an opaque cloudy peachy orange with a small white head. Aroma has pithy plums, a bit of wild yeast, and a touch of oak. Flavour is pithy and floral in the plum department, with light wild yeast, and a pithy murkiness. Good but rather simple.

Bottle, 500 ml shared with MiroB and Luka. Cloudy yellow with white head. Some funk, citrus, lemon, white grapes, pleasant tartness. Nice balance.

Dry, funky, tart and vinous with grapes, berries, mild sourness, oaky woodiness, hints of honey and musty yeastiness. Quite complex and vinous, but balanced wild ale.

Amber colour, small white foamy head. Aroma is floral, fruity, some tartness with wood and some berries as well. Flavour is rather similar to the aroma, but also has a rather dry tannin like element to it.
