Description
In 2012 the Schaefer family began planting heirloom and cider apples on the homesteaded family orchard. At this same time, we started to create small batches of cider. As the cider started to flow, so did our experience with and enthusiasm for these old cultivars. Currently, Pux Ciders benefit from close to 125 of our apple cultivars. These range from American dessert apples to French and English cider apples. We use these apples to create each unique batch of Pux crafted ciders. We also use other local Michigan products in our ciders, like tart cherries, pears and hops.

Can from Holiday Market. Pours a clear silver, pale straw color with a quickly dissipating finger of bubbly white foam. Champagne yeast nose with mineral, pear and more yeast aromas. Dry on the palate with a lot of alcohol present, cheap white wine notes and tartness. Delicious. Tart green/crisp apples/fruit peel/spearmint/earl grey tea/herbal/pepper. Dry/semicrisp carb. Lingering acid/tang/tannic drying. Cooling mint finish. Refreshingly smooth. Great fruit/spice complexity/balance. Very well made dry cider.

Very nice. Tart cherry/pineapple/red/green/crisp apples/fruit peel/herbal/lt pepper/yeast. Semidry, crisp/foamy high carb. Lt lingering acid/tang/tannins. Smooth, pretty refreshing. Nice fruit complexity/balance. Well done.

Very nice. Tart/tangy rhubarb/strawberry/skin/seed/red/green/crisp apples/fruit peel/herbal/lt pepper. Very dry/med carb. Crisp/clean/refreshing. Great fruit complexity/balance. Not as much berry as expected, but adequate. Well made dry cider.

Great! Juicy/tart/tangy cherries/skin/pits/red/green/crisp apples/fruit peel/oak; lt toffee/vanilla/herbal/spice. Med sweet/carb. Lt acid/tang/tannin drying. No cloying. Very smooth. Great fruit complexity/balance, and overall oak presence. Impressive!

Very nice. Lt tart/tangy raspberry/key lime/red/green/crisp apples/fruit peel; lt herbal/spice. Semidry/lt-med carb. Lt acid/tang/tannic drying. No harshness. Flavorful/refreshing. Nice apple complexity, wanted more berry/lime presence, but very well done
