Description
Cervecería Dos Aves nace del sueño de dos cerveceros de corazón que buscaban ofrecer una buena chela de calidad al mercado mexicano, cuando la oferta artesanal era muy limitada. Es por eso que, en 2012, se fundó Dos Aves.

Desde entonces, nos hemos dedicado a crear recetas que conecten con las personas a través de los sabores y las experiencias que las acompañan.

Cervecería Dos Aves tiene su hogar en la fragua de la independencia mexicana, San Miguel de Allende, Guanajuato, un lugar lleno de historia que nos inspira a seguir creciendo y alcanzar nuevos rincones de la República.

Poured from 355mL bottle @ Mara & Co. Very dark brown with minimal beige head. Very roasty (beerplace won't like this), some coffee and chocolate, medium body. Simple, competent. Wouldn't mind trying a bourbon barrel aged version of this. Decent.

Bottle 0.355l from Cancun. Cloudy, red to black colored. AROMA- roasted malts, dark chocolate, nougat, earthy, black cherries, prunes, touch of balsamico. FLAVOR- smooth and silky, creamy, neutral, moderately bitter, roasted, touch of ash, strong dark coffee, dark chocolate, touch of nougat, earthy. Full bodied. Exemplary imperial stout.

A golden ale with a thin lacing white head. In aroma, sweet fruity biscuit malt with resinous floral hops, light cereals, light citrus, pleasant. In mouth, sweet fruity malt with light grassy resinous floral hops, light cereals, light citrus, pleasant. On tap at Bacon Bar Roma.

Taster at Cyprez Tap Room, Ciudad de México. Lightly cloudy, amber colored. AROMA- apple, vanilla, tequila, alcohol, biscuits. FLAVOR- slightly sweet, slightly bitter, warming, apple, fruity, tequila, alcohol. Fuller bodied. Tasty.

Draught at Hop 3 The Beer Experience, Mérida. Hazy, gold colored. AROMA- tropical fruit, citrusy, exotic, some vegetable. FLAVOR- neutral to dry, moderately bitter, juicy, exotic, grassy. Medium bodied. Old school New England IPA... :)

Keg at Fiebre de Malta, Mexico City. Clear pale golden, mid sized head. Generous aroma of yuzu and tangerine. Mid dry with medium body and well rounded mouthfeel. Lots of citrus, notes of mango. Mid bitter finish. Aromatic and harmonious. A winner!

Keg at Drunkendog, Mexico City. Hazy golden, rich head. Aroma of guava and honey. Sweet with medium to full body and well rounded mouthfeel. Fruity with citrus and honey, some mealy guava. Mid bitter finish. Well made.

Keg at Fiebre de Malta, Mexico City. Lightly hazy golden, mid sized head. Generous aroma of papaya, mango and tangerine. Mid sweet with light-medium body and well rounded mouthfeel. Lots of tropical fruit hops. A bready slender malt backbone carries it. Long bitter finish. Combines modern style juicy hop aromas with traditional style delicate malt character and early style craft IPA up-your-a** bitterness.

Subtle florals like quesadillas in Xochimilco. Some hay and a little coriander. Clear golden pour with good head and lacing. Light sweet end. Nice balance here, and worlds better than Diablos, which lacks the subtlety of this one. Bottle at el Trappist in CDMX.

Roast and light caramel woth big coffee. Oily consistency. Black pour with good head and lacing. Bittersweet finish like the price of cool lulooking crafts in San Miguel de Allende. Bottle.
