Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Very simple stuff, some crispy hay, husky pale grains, straw. Light bodied, average carb. Fairly clean to finish, lightly drying. Drinkable.

Can from Fuss Club at home. Brownish orange colour with a slim head. Aroma and taste are tart orange and peach. Slight sour. Crisp body.

Can from the Fuss Club at home. Orange colour with a thin off white head. Tart to sour citrus and certainly tangerine. Crisp body.

Draft at the Strait and Narrow. Clear deep golden colour with a small head. Aroma and taste are tart to sour. Light tropical fruit and berry. Medium to light body. Certainly not a smoothie.

Can from Havnens Vin & Tobakhus. Pours clear dark golden with huge foamy white head. Aroma is intense caramel, vanilla, cinnamon, green unripe pears, butter, biscuits, and vinegar. Taste is medium to very sweet, light bitter, medium to very acidic. Body is creamy with fizzy carbonation. Finish is long balanced sweet and acidic with intense caramel, vanilla, unripe pears, cinnamon, cardamom, biscuits, butter and vinegar.

Frothy white fair mostly diminishing head. Red colour. Very acetic aroma. Berries not that present, Light bitter very acetic flavor. Yuzu dominating. Average finish. Watery palate and very fizzy.
