Pastore Brewing and Blending produce fresh and aged sour and wild beers.
The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Taster from tap at Vienna Kraft Bier Fest at Gleisgarten, Saturday Lunch Session. Smells / tastes spices, vanilla, earthy, medical. A tad too medical / too much vanilla for me, not a fan of the balance. 7, 6.5, 6.5, 6, 6.5

Can from Havnens Vin Og Tobakhus. Pours dark pale red with medium white head. Aroma is intense redcurrant, lime zest, bitter orange, herbs, and vinegar. Taste is light sweet, faint bitter, very acidic, and faint salty. Body is oily with sparkling carbonation. Finish is long and very sour with intense notes of redcurrant, lemon, sour cherry, vinegar and hints of not quite ripe strawberries. Very sour.

Might as well have been called Molto Wet as my clumsy fingers managed to tip most of it over on the way to the bog 😅. Light citrus & apricot aromas. Zesty citrusy taste. Light & refreshing.

At first the pistachio was was dominated by the roasted stout flavours but. Started to come forward. Honey is subtle. Rich and smooth.

Taste comprises pink berries, hibiscus, hedgerow, herb, balsa wood, light funk.
Medium bodied, fine carbonation, semi drying close with a balanced acidic rise.
Tidy well rounded sour.
