Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

On tap at The Rusty Bucket, Eltham. Sweet red berries & pecan pie aromas. Tart red berries & pecan taste. Tart dry finish.

Carrot shade of orange topped with an off white cap that thins to a swirl
Nose is tangy citric zest, guava, pink berry sherbets, floral notes, grass.
Taste comprises pink berries, hibiscus, hedgerow, herb, balsa wood, light funk.
Medium bodied, fine carbonation, semi drying close with a balanced acidic rise.
Tidy well rounded sour.

Huge just off-white head over hazy yellow beer, with audible carbonation. Oranges, even a hint at lime. Lactic acid too, salicylic acid. Quite sour and astringent, with a slight bitterish edge - blood orange very obvious. Again lactic acid. Serious acidburn. Thinning less evident seen the low ABV. Medium carbonation at best, in the end. Ultra dry. Refreshing, if not thirstquenching seen its dryness. Severe. Thx to Stef!

Keg at Ghost Whale, Brixton. Clear light gold. Thinnest translucent white head. Aroma had light citrus and sweet malts and yeast and maize. Flavourwise is pretty much the same. Light. Thin. Soft carbonation. Slightly dry, slightly astringent finish. Good for the style but it's an awful style.
