The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

440 ml can, from Vinmonopolet, Nettbutikken. ABV is 6.0%. Golden colour, nearly clear. Large white head. Aroma of pineapple, lime, coconut and vanilla, hints of lactic acid. Sour and sweet flavour, lots of pineapple, coconut, vanilla, lactic acid and some lime. Not the very best piña colada beer I've had.

Tap at Sommar, Waterloo Street, Birmingham. Pours a dark cola brown with a thin beige head. Sour cherry compote on the nose with dark malts and cola. Taste is more balanced than expected from the aroma. There is a nice tart fruity cherry compote with a cola like note and mint. Quite acidic a somewhat drying in the finish. Good.

Can from LCB, consumed 7 months before BBE. Semi hazed orange-gold with decent white covering for a sour. Aroma of pink grapefruit, funky lemon, mineral water. Punchy sour with grapefruit and lemon zest, sherbet, grass. Mid bodied, tart, fine carbonation.
