Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Вкус в стиле, хотя хмеля через чур, очень сильно ощущается цедра от фруктов, затем при глотке большая сухость от травы, умеренная горчинка, снова много от грейпфрута и лимона. В целом можно пить и в стиль, но горько и сухо.

Аромат сразу интересный, есть дикие дрожжи, за ними немного ягод типо земляники и немного вишни, есть также нотки вина с виноградом. Цвет не мутный, напоминает ягодный компот. Во вкусе снова немного диких ноток, даже сена немного на месте, есть ягоды, земляника и возможно малины. Немного винных ноток на финише. В целом очень интересно и выверенно.

Bottle from BiervanEijk, Frederiksoord. Lots of tart red fruits in the aroma, with tart cherries, raspberries, roosvicee. Tart and light sour flavour, body is medium. Not an Old Bruin, lacks complexity, but certainly tasty for what it is.

Bottle as a gift, thanks mom! Aroma is tart dark fruits, soft roasted/chocolate malt, blackcurrant, notes of cognac barrel, light ash, hint of salty liquorice even. Dark berries with notes of chocolate. Flavour is tart and light sour with a little sweetness on the horizon. Interesting joining of dark fruits and dark malts, it works really well. Well-balanced too.

Can at home and part of Fussmageddon advent. Reddish colour with a thin off white head. Aroma and taste are tart to sweet fruity sour with cherry and subtle vanilla. Crisp body.

Can from BiervanEijk, Frederiksoord. Lacto sourness, lots of lemon peel and lime, some orange zest. Some puckering sourness, crisp, mild bitter. Body is medium. Nice.

22/1/2025. Bottle shared by danlo, cheers Ed! Pours slightly hazed dark amber bronze with a few bubbles. Aroma is woody, plummy, tannic, hedgerow, berries, touch herbal. Moderate sweetness and bitterness with good fruity tartness. Medium body, average carbonation. Enjoyable.

440ml can from Beer Musketeer in Southsea. Pours cloudy light yellow with a white head. Aromas & tastes of pink grapefruit & lemon. Moderate body. Sour finish. Highly enjoyable & even more so because of the low alcohol

Almost clear amber topped with an off white cap that thins to a swirl.
Nose is tarte fruit esters, herb, light acidic nostril pinch, vinous, damp cloth.
Taste comprises tarte fruit rinds, funk, light acidic bite, wine barrel, tannins, dried berry skins.
Medium bodied, fine carbonation, light drying close with a balanced puckering edge.
Tidy sour.
