The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Can from Candy & Liquor, Birmingham. New brewery for me. Vibrant orange, brief fizz, some retention around the edges. Aroma of buckthorn, coconut creaminess, light funk. Taste is sour without being overbearing, flavours of buckthorn, coconut, mango, vanilla, yeast. Medium to full bodied. Sweet tangy middle and then a drying bitterness. Good.

Bottle shared at the CBJ BIG BOOSTY XMAS tasting, thanks to Kenneth, 13/12/23. Murky reddish pink topped with a crimson cap. Nose is pink berry sherbets, damp hay, grains, barnyard spike. Taste comprises damp berry skins, funk, grains, damp straw, lactic tang, sharp berries. Medium bodied, fine carbonation, drying close with a puckering bite. Tidy sour.

Appearance is deep ruby red, with a small fizzy head. Aroma is intense cherry, blackcurrant, berry fruit, crumble. Taste is cherry, blackcurrant, strawberry, tart fruit, fruit crumble, bit of brambly fruity malt in the background. Works well.

Keg at Gidea Pk tap house. Hazy orange beer, small pale cream colour head. Light palate, semi dry, a good fine minerally crispness. Thinnish malts, a thin creamy sweetness. Obvious vanilla sweetness offsets some tart citrus. A little acetic burn, mild mango. Light crisp finish. A decent sweet and sour brew, just a bit aggressive on the acetic side.

Keg at fierce edinburgh. Pours clear pink, nose is raspberry, funk,spice, taste is tart, cherry, funk, spice.

750ml bottle from Little Pomona. Plummy golden colour, bubbly white foam head with purplish tinge and aroma of citric zest, plum, wood barrel, acetic funky, red wine. Taste is sour, zesty, citric rind, plum fruit, barrel notes, woody, oak, port hint, with tartness, acetic funk, and light bitterness. Medium bodied, soft carbonation, tart soured finish. Nicely drinkable.

Monday 18th November 2024, beer share at my place, just four of us and a load of old and new beers. 440ml can (BB October 2022, cheers Mat). Hazy yellow body, white crust on top. Sour pineapple front, spiced middle and a salty finish. Not really my thing!
