Description
19th century land-use plan of the area mentions a brewery owned by a certain Petronnella De Troch.
Even older records indicate that her father, Pieter De Troch, was running a brewery on the same site in the late 18th century. Petronnella married Egidius De Troch and in 1898 their son Louis took the family business over. Louis Married J. De Neve, and their son, also Louis, inherited the brewery and farm in 1936. The same Louis married M.L. Van den Moortel.
Their nephew Jos Raes and his wife M. Vanderhasselt took on the family tradition in 1974 and have been running this rare craft brewery ever since. In 2002, their son Pauwel Raes joined his parents into the family business.
In July 2012 Pauwel & his wife Kristel Schelfthout took over the brewery to continue the brewery tradition !

Bottle. Sour raspberry aroma with light mustiness. Cloudy ruby red color with moderate head. Sweet raspberry flavor predominates with light tartness and mustiness. Nice sweet sipping lambic but nontraditional.

25 cL bottle. Pours hazy red/brown with a diminishing pink head. Fruity strawberry aroma. Quite citric straberry flavoured with mild underlying sweetness lingering into the finish. Starts citric and turns slowly sweet with strawberry flavour on top. Mild lambic woody and sulphorish flavour too.

Purchased March 2007 in Brussels, for no other reason than the style is so rare and hard to get, especially in the United States. I enjoyed this beer. Hardly world class, and surely the weakest faro I have had, but like all of Chapeau’s products, it is very drinkable. The aroma has caramelized sugar. A dark brown beer with tons of sediment like all Chapeau products. Sweet flavor with apple, brown sugar, very light hops surprisingly, just a hint of barnyard, from whatever actual lambic is actually in this beer, and finally yeast.

25 cL bottle. Pours slight hazy red with a brownish hue, small lacing bobble head with pink colour. Dry cherry aroma. Fruity cherry flavour, medium sweetness. Goes into a decent citric cherry finish, maintaining a lot fruit flavour.

25 cL bottle. Pours slight hazy yellow with a lacing white head. Aroma is sticky sweet banana - even from a meters distance, it did reveal some lambic notes once my nose had adjusted to the banana aroma. Slight lambic sour note in the start and finish and with a sweet banana flavour in the middle. No bad as such - but I honestly will never return to this.

25 cL bottle. Pours golden orange with a white creamy/crispy head. Almost soapy lemon aroma, rather clean. Sweet and citric lemon flavoured with a whiff of that classic lambic woody flavour. Lemon lasts into the finish. Quite refreshing.

25 cL bottle. Pours dark brown/amber with light red head. Heavy raspberry aroma, sweet/citric. Very sweet raspberry flavoured with a woody edge. Goes into a very citric finish and goes completely citric-dry. Nice and very fruity.

Bottled. Yellowish golden colour, not much head. Artificial bananas with sweetish sourness all the way through, both in aroma and flavour. Don’t ever try to have any kind of cheese with this one...

Bottled. Hazy orange colour, mediumsized white head. Aroma is dishwater, soap and artificial apricot. Flavour is big sugary apricot and paper. Not worth the money.

Bottled. Golden colour, small white head. Aroma is some pineapple along with sourness and rubber,. Flavour is really bad, pineapples, rubber, metal and some paper. Really not pleasant at all. Yet another De Troch, that just isn’t very nice.
