Clear amber red beer, big creamy off-white head, pretty stable, non adhesive. Aroma: sweet, lots of caramel, spicy, malty, wet grains, overripe banana, pretty yeasty. MF: lively carbon, medium body. Taste: malty start, lots of caramel, grains, lots of spices, some cloves. Aftertaste: soft acidity, spicy, lots of ripe to overripe banana, little bitter, more spices, yeasty finish.
Paired with a vegan pasta carbonara (Bosh! style). The malty caramel sweetness and winter spices paired really nice with the creamy sauce and sweet & salty maple soy sauce glazed shiitakes.

Clear dark brown beer, big creamy bit irregular beige head, little stable, non adhesive. Aroma: sweet, caramel, ripe banana, some chlorine, cloves, milk chocolate, ginger bread, spices (peperkoek), bit malty, a bit off. MF: ok carbon, medium body. Taste: bit malty, dark chocolate, nice roast, pretty bitter, some banana, bit metallic, little fruity. Aftertaste: malty, bit off, wet grains, some cardboard, rotten fruits, unpleasant, overly spiced, some cardamom, cloves.
Paired with a vegan pasta carbonara (Bosh! style). This stout was a bit too strong for the food pairing. It's brother "Ull", a winter ale, worked much better.

Clear dark brown beer, small creamy irregular beige head, little stable, non adhesive. Aroma: sweet, lots and lots of caramel, oxidized, dried fruits, raisins, some chocolate. MF: ok carbon, medium to light body. Taste: soft roast, bit malty, chocolate notes, dry, bit spicy, oxidized, coffee touch. Aftertaste: bitter, some caramel, roasted, dark chocolate, slightly sweet, some ripe banana.

Brussels beer trying to evoke the beginnings of beer history in Mesopotamia, brewed with bread, as the fermentation of bread – in ancient form – is often quoted as the origin of beer. Thanks tderoeck for sharing. Mousy, egg-white, creamy head, opening with flat islands of foam in the middle, misty caramel brown robe with ‘rusty’-reddish tinge. Aroma of bread crumbs, rusk, toffee, stewed redcurrant berries, ground hazelnuts, muesli, soggy toast, plum jam, fig compote, earth. Fruity onset, sweetish and estery with notes of plum and fig, sourish undertone with a somewhat ‘dirty’ effect possibly hinting at onsetting infection; bready middle with caramelly malt sweetishness, the breadiness coming from malts and (stronger) yeast but no doubt from the actual bread as well, sourishness continuing, tad soapy in the end with a very earthy, almost ‘muddy’ and dusty-yeasty finish, mixed with leafy hop bitterness. Technically flawed, ‘dirty’ as a result of onsetting infection, likely due to the addition of the bread – but I have the impression that all of this brewery’s beers have similar flaws so they obviously still have a lot to learn from a technical point of view.

Clear red brown beer, small creamy beige head, unstable, non adhesive. Aroma: some banana, sugary, caramel, some dried fruits, bit malty, some molasses. MF: ok carbon, medium body. Taste: bready, bit funky, watery, bitter, pretty dirty and unpleasant. Aftertaste: dirty, sourish, infected, bitter touch, weird, not good, some tannins, a bit astringent, yeasty.

Brussels ale from this new beer company, flavoured with elderblossom. Bottle with simple hangtag like their others, no label. Thin and very loosely bound, egg-white, regular head quickly settling as a thin ring; cloudy ochre-hued straw blonde robe. Aroma of indeed dry seitan- and herb cheese-like elderblossom, green tea, banana peel, soap, withering cut flowers, raw potato, parsnip, dough, old carrot soup, moldy bread and some background DMS – all but inviting, if you ask me. Restrainedly fruity onset, old apple and banana peel accents, low in sweetness with a more outspoken sourish undertone, but ‘dirty’, soft carb with subtle minerally side notes over a thin and even somewhat ‘watery’ cereally and grainy, thinly bready malt body; green vegetable notes in the finish which probably represent the elderblossom, but in a far less ‘meaty’ or even floral way as I am used to from beers flavoured with this ingredient. Ends thin, grainy, dull and watery, with a soapy elderblossom aspect lingering, but clearly insufficiently hopped. Poorly executed, could have been an elegant, gentle quencher if it had a bit more body, character and boldness.

F: bit tan, medium, not long lasting. C: deep gold, hazy. A: sweet combined with acid, raspberries, plastic, bit band aid. T: malty backbone, sugary raspberries, candy, bit sour and bad aid tones, medium body and carbonation, nothing very enjoyable, not good balanced, sample from 33cl bottle @ RBBSG 10/2018.
