Tap. Pours clear ruby brown with a small beige head. Aroma is funk, red wine, cherry. Flavor is very lightly sweet, medium tart cherry, vinaceous, whiskey notes present, but not strong. Dry finish, light warming on the palate. Medium body, rich mouthfeel, low carbonation. Quite enjoyable.

Tap. Pours clear reddish amber with a medium tan head and great lacing. Aroma is funk, yeast, red wine, wood, cherry, hay, pine, oranges. Flavor is the same, lightly sweet and just a light tartness, touch of woody astringence in the background. Vinaceous. Semi Dry finish. Medium body, nice overall.

Draft at Torst. Pours cloudy yellow. White head ring. Nose and taste of gin, oak, French oak, bright lemon, tart citrus, wheat malt and banana. Medium body.

Nice ruby amber pour with huge fluffy head. great aromas of tart wine. tastes so delicious of toffee, wine grapes, light caramel, earthy and floral hops, slighty funky, and yeasty. Amazing Zymatore brew

The first zymatore beer I had privilege of trying at Proletariat. pours cloudy yellow with pillowy head and huge refreshing aromas of tart spring scents. Tastes yeasty, slightly sour, grassy, lemon, cumquat, woody. really refreshing and great beer i would drink all day. zymatore took a style i don’t prefer and made it outstanding in this case

Tap at Proletariat the last of my zymatore tastes but will certainly try to continue drinking all of these i can. dark ruby pour with again no head. nose of peat and dark fruits. tastes of peat, grapefruits, cherries, caramel, earth, and is tart and some whiskey deliciousness. awesome end to awesome afternoon

Tap at Proletariat bours ruby brown with no head at all. smells of sour cherries and dark chocolate. tastes similar of jammy cherries, chocolates, red wine, tobacco, and some boozing warm goodness on the end. its tart and rich a fun combo

Tap at Proletariat they day after big zymatore event. Pours yellow and looks like still flat chardonnay, nice nose of honey and grass. Tastes of honey, white wine, grassy, buttery in a good way, earth, and vanilla.

Sample at the Studio 35 Barrel Aged Beer / Slap Shot screening on 02/10/2013. Pours a hazy amber-orange color with a medium off-white head that diminishes steadily. Stringy lacing. Aroma of bready malt, caramel and fruit. Medium body with flavors of caramel malt, tart fruit, oak and yeast. The finish is slightly sour and fruity with a lingering oaky vinous aftertaste. I was a little skeptical about a Zinfandel aged beer but this works pretty well.

Draft at Beer Run. Pours a clear amber color with moderately strong legs. Aroma of sweet honey, apple, mild pepper, grapes. The taste is honey, tannins, strong pepper notes. Medium bodied, lingering spice. Interesting, but I couldn’t take too much of this. Not intensely hot, just intense.
