Description
For us, good living means exploring – the opposite of “comfortable.” It’s not just about craft, but about questing, questioning, transforming “What If” into “Here’s How,” by way of an experiment so crazy, it just might work.
Exploration is the line from local beer maker to World-Class Brewer. It’s a pioneer impulse, and it sets the authentic, rural heartbeat of Southern Tier. It’s how we got here. And by the time others catch up, it’ll be why we’re already somewhere else.
From our wildly innovative founder, Phin DeMink, who’s still a daily inspiration, to the new generation of brewers, thinkers, and drinkers who share our pursuit of what’s next, we keep honing the creative edge of brewing discovery.
So this is an open invitation, to anyone who gives a damn about the difference between a well-crafted beer and a stunningly satisfying encounter with the new. Join us on the road less traveled.

Clear deep amber with a tall off-white head. Last shot from the bottle pours yeasty and cloudy. Big malt aroma supported fully by a grapefuity hops. Well balanced flavor that follows the aroma. The flavor profile leans slightly to the malty side. Big body, sticky palate. I’d like another please.

Viscous black pour with lasting tan lace - aroma is dominated by dark roast coffee, port, alcohol and a burnt toffee/caramel presence - the body is substantially thinner than the pour suggests - cloyingly sweet, with a serious alcohol burn - coffee bitterness tries desperately to balance it, but falls far short - the coffee flavor itself is more like that of the dregs from a coffee pot that has been sitting on the burner for hours - a hint of plum, and a port-like flavor try to come to the fore near the finish, but the alcohol burn quickly becomes the most prominent feature in the flavor, leaving a boozy, overly sweet finish - this beer is trying very hard at being Speedway Stout, and is failing miserably at it.

Copper/red pour with lasting, sticky lace - very floral and spruce/pine aroma, with some candy-like sweetness and very present hallertau, but a strange, metallic character rounds it out - slight sweetness up front, which is quickly squashed by and overwhelming, dry bitterness...we’re talking martini dry - other than some mild background malt that is so faint I can’t even identify what kind it is, this beer is all hops - even a hophead needs something else to his beer, guys!

[Bottled at Oliver Twist, Stockholm] Pours thick pitch black without a trace of a head. Slivovic-like plum brandy aroma burning of alcohol. Veru sweet. Some coffee simmers in a sea of syrup and alcohol. The mouthfeel is cloyingly thick, and beneath lies some sharp malt. Achingly sugary finish with extreme amounts of alcohol coming through, despite the overly ramped up sweetness. The nice coffee flavour is the one redeeming feature in this concotion. Oh, and in what way is Jamaica halfway around the world from North America?

Draught pints at Redbones and samples at ABF, June/July 2006.
Dark amber in color, though with strong brass-golden highlights that lighten the color somewhat. At no point would I call it red, but whatever, that hardly matters. Head is white/off-white and fulffy, though receding rather quickly to partial cover, with spotty lacing at best.
Floral, spicy, soft hops in the nose are rather delicate, with some flower-petal-like perfuminess keeping things from becoming heavy. Very full in the hop department, with a strong aroma, but rather lacking in malt. Just some lean pale grains. For a "red" ale, I would have liked to have seen a bit of smokey grains, touches of dry chocolate or caramel or something of that nature. This one just focuses on the hops.
The flavor becomes bogged down in papery, dry, leafy hoppiness. Moderate bitterness is not so much the problem as is the fact that it tastes like I’m chewing on hop leaves. No malt balance or much of any softness to speak of, it just seems to start and finish with hops. Granted the hallertauers are done well and are bold, flavorful and distinct, but a beer can’t be all hops. Mouthfeel is too aerated, with large-bubbled carbonation further displaying the lack of malt. If it is 9.5, I certainly didnt taste or smell that. Not watery, but just chewy in a leafy, hoppy way.

Pours clear, dark amber into a tulip. Caramel, pine and citrus (orange, grapefruit) notes. Head quickly recedes leaving slight lacing. Sticky and full. First tingles the tongue with bitter, but turns to a well balanced caramel until turning back to the citrus hop finish.
