Good ideas often start over beer. Always looking to take a good thing too far, we sat down over a beer (or two) and decided that beer itself was a good idea. Of course, not just some easy-drinking, institutional prole beer, but stuff like the beers we’d had at great bars. In short, we wanted beer with flavor. Complexity. Character. Intensity. Not words found in the mass-market lexicon.
So with a banjo burner, a bunch of industrial-sized kitchen pots and as many buckets as we could find, we jumped in feet first. Once a week, every week. Now, several years later and with a 15 barrel version of said banjo burner and kitchen pots for a brewhouse, we’re befuddling the beer judges and converting the masses. One pint at a time.
Our original brewing system has a long and sordid history befitting our line of beers. It centers on the second-to-last kettle ever built by noted coppersmith Fred Zaft, a handcrafted, solid copper 7-barrel brew kettle originally housed in a nineteenth century bar in San Francisco’s old Italian neighborhood. At one point, the bar had been totally restored to its past glory, replete with a “self-flushing spittoon” under the bar (yes, it was actually a urinal). Unfortunately, we were not able to get the self-flushing spittoon.
If you think our beers tend to cross various lineages, you’ll love tidbits like the fact that in 1951, our current building endured a freight train derailing and plowing into the building. We hope our beer can make that sort of impact on you.

12 ounce bottle into tulip glass; no bottle dating, but is a recent release. Pours slightly hazy deep orange/light copper color with a 1-2 finger dense and rocky off white head with great retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big raisin, plum, fig, pear, apricot, red apple, white grape, red wine, peppercorn, clove, toasted oak, honey, brown sugar, and biscuit; with light notes of vanilla, herbal, grass, and yeast/oak/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, wine barrel, and moderate candi sugar/malt notes; with great strength. Taste of big raisin, plum, fig, pear, apricot, red apple, white grape, red wine, peppercorn, clove, toasted oak, honey, brown sugar, and biscuit; with light notes of vanilla, herbal, grass, and yeast/oak/toasted earthiness. Light-moderate peppery yeast/wine tannin spiciness, and light herbal/grassy bitterness on the finish. Lingering notes of raisin, plum, fig, pear, apricot, red apple, white grape, red wine, peppercorn, clove, toasted oak, honey, brown sugar, biscuit, herbal, grass, and yeast/oak/toasted earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/spicy yeast, wine barrel, and moderate candi sugar/malt flavors; with a great malt/bitter/spiciness balance; and no astringent flavors after the finish. Light-moderate increasing dryness from yeast/oak spiciness. Medium carbonation and body; with a very smooth, moderately creamy/bready, and fairly sticky/tannic balanced mouthfeel that is great. Mildly increasing warmth of 9.3%, with minimal barrel booziness lingering after the finish. Overall this is an excellent Belgian strong pale ale. All around great complexity, robustness, and balance of fruity/spicy yeast, wine barrel, and moderate candi sugar/malt flavors; very smooth and easy to drink for the ABV; with the mellowly spicy/tannic/dying finish. Well rounded yeast complexity, great wine barrel integration, and perfect malt/sugar balance. Not overly sweet/heavy for the ABV. A very enjoyable offering, and spot on style example. Liked it a bit more than the base beer. More stone fruit and less banana than I recall because of the wine barrel.

Nice tasty and pleasant stout.
Raven black with a fine head. Ok lacing. Good intensity in the aroma. Fine body and a pleasant carbonation level. Easy to drink. Balanced sweetness. Chocolate, fruity, roast, herbal and some coffee.

355ml bottle from Brewdog shop. The beer pours amber in color with a thin white head, lasting. Malty full bodied, piny hops, hints of almonds, caramel and bready malts. Slightly boozy notes. Nice sipper.

Bottle from Brewdog Online Shop. Pours a lovely clear copper with a thin off-white head. Heady resin and pine aromas. Taste is rich, bitter, orange peel, resin and wood. Slightly sticky, faint honey. Cleans up nicely though.

12 ounce bottle into pint glass, bottled on 3/2/2018. Pours moderately hazy/cloudy golden orange/amber color with a 1-2 finger fairly dense and rocky off white head with fantastic retention, that reduces to a large cap that lasts. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of grapefruit, tangerine, lemon, peach, pear, apricot, red apple, citrus peel/rind, peppercorn, clove, pine, agave, wheat, cracker, biscuit, herbal, floral, grass, and yeast earthiness. Nice and pleasant aromas with good balance and complexity of citrus/earthy hops, fruity/spicy yeast, agave, and pale/wheat malt notes; with solid strength. Taste of grapefruit, tangerine, lemon, peach, pear, apricot, red apple, citrus peel/rind, peppercorn, clove, pine, agave, wheat, cracker, biscuit, herbal, floral, grass, and yeast earthiness. Light-moderate pine, citrus peel/rind, herbal, grassy bitterness; and peppery yeast spiciness on the finish. Very nice complexity, robustness, and balance of citrus/earthy hops, fruity/spicy yeast, agave, and pale/wheat malt flavors; with a great malt/bitter/spiciness balance, and zero cloying/astringent flavors after the finish. Light-moderate increasing dryness from bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, and creamy/bready/grainy/sticky balanced mouthfeel that is great. Zero warming alcohol for 6.3%. Overall this is a very good hoppy American pale wheat ale. All around nice complexity, robustness, and balance of citrus/earthy hops, fruity/spicy yeast, agave, and pale/wheat malt flavors; very smooth, crisp, and pretty refreshing to drink for the ABV; with the modestly bitter/spicy/drying finish. Nice Amarillo hop showcase, and very well balanced between all other flavors. A very enjoyable offering, and well made style example.

Bottle: Hazy amber-orange with a huge, slow, off-white head. Sweetened orange aroma. Taste is candy-sugar-orange, caramel malt, orange-peel. Light and airy, with a pleasant increasing peel-leafy bitterness. very good.
