So with a banjo burner, a bunch of industrial-sized kitchen pots and as many buckets as we could find, we jumped in feet first. Once a week, every week. Now, several years later and with a 15 barrel version of said banjo burner and kitchen pots for a brewhouse, we’re befuddling the beer judges and converting the masses. One pint at a time.
Our original brewing system has a long and sordid history befitting our line of beers. It centers on the second-to-last kettle ever built by noted coppersmith Fred Zaft, a handcrafted, solid copper 7-barrel brew kettle originally housed in a nineteenth century bar in San Francisco’s old Italian neighborhood. At one point, the bar had been totally restored to its past glory, replete with a “self-flushing spittoon” under the bar (yes, it was actually a urinal). Unfortunately, we were not able to get the self-flushing spittoon.
If you think our beers tend to cross various lineages, you’ll love tidbits like the fact that in 1951, our current building endured a freight train derailing and plowing into the building. We hope our beer can make that sort of impact on you.

Sampled from the tap at 7 Monks. Pours a clear yellow gold with a white head that dissipates to the edges. Aroma has notes of pancake and cookie with earthy grains backing. Flavor has straw and pancake with a good amount of biscuit.

12 ounce bottle into pint glass; no bottle dating, but is a recent new release. Pours lightly hazy/cloudy deep ruby red/brown color with a 1-2 finger dense light khaki head with good retention, that reduces to a small cap that lingers. Nice dense soapy lacing clings on the glass, with a far amount of streaming carbonation. Aromas of nutty medium roast coffee, caramel, honey, brown sugar, and toasted brown bread; with lighter notes of milk/dark chocolate, cocoa, smoke, dark fruit, herbal, grass, pepper, and roast/toasted earthiness. Nice and pleasant aromas with good balance and complexity of dark/bready/light roast malts, coffee, honey, and light-moderate earthy hop notes; with solid strength. Taste of nutty medium roast coffee, caramel, honey, brown sugar, and toasted brown bread; with lighter notes of milk/dark chocolate, cocoa, smoke, dark fruit, herbal, grass, pepper, and roast/toasted earthiness. Light-moderate herbal/grassy/spicy hop and roasted coffee bitterness on the finish. Lingering notes of nutty coffee, caramel, honey, brown sugar, toasted brown bread, milk/dark chocolate, cocoa, smoke, herbal, grass, pepper, and roast/toasted earthiness on the finish for a while. Very nice complexity, robustness, and balance of dark/bready/light roast malts, coffee, honey, and light-moderate earthy hop flavors; with a great malt/bitterness balance; and zero acrid/astringent flavors after the finish. Lightly increasing dryness from hop/roast bitterness. Medium carbonation and body; with a very smooth, moderately creamy/bready/grainy, and lightly sticky/chalky balanced mouthfeel that is great. Zero warming alcohol as expected of 5.5%. Overall this is a very nice American brown ale. All around nice complexity, robustness, and balance of dark/bready/light roast malts, coffee, honey, and light-moderate earthy hop flavors; very smooth and easy to drink with the mellowly bitter/drying finish. Great fruity/nutty coffee complexity, balanced with a classic brown ale malt profile, honey, and a fair amount of earthy hops. Not too roasty. A very enjoyable offering, and spot on style example.

Draft at the brewpub. Deep opaque brown-black body, thin/medium clumping light brown head. Nose spicy, roasty. Rich, fruity, oily, roasty body with a flourish of coffee beans, dark fruit tannins, strawberry, and chocolate, the depth apparent immediately. Finishes with dry cocoa notes. Excellent.

Draft at the brewpub. Cloudy medium orange-brown body, medium dense, clumping cream head. Nose catty with bitter citrus peel. Catty, herbal, leafy, tannic body. Nice firm bite.

12 ounce bottle into tulip glass, no bottle dating. Pours nearly opaque dark brown/black color with a 2 finger dense and rocky light khaki head with awesome retention, that reduces to a nice cap that lasts. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toasted oats, and dark/brown bread; with lighter notes of nuttiness, vanilla, smoke, char, dark fruit, herbal, wood, pepper, and yeast/roast/toasted earthiness. Nice and pleasant aromas with good balance and complexity of dark/roast/bready malt and light earthy hop/fruity yeast notes; with solid strength. A bit too yeasty, but not overpowering. Taste of big milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toasted oats, and dark/brown bread; with light notes of nuttiness, vanilla, smoke, char, dark fruit, herbal, wood, pepper, and yeast/roast/toasted earthiness. Light roast/char and herbal/woody/spicy hop bitterness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toasted oats, dark/brown bread, nuttiness, smoke, char, dark fruit, herbal, wood, pepper, and yeast/roast/toasted earthiness on the finish for a while. Very nice complexity, robustness, and balance of dark/roast/bready malt and light earthy hop/fruity yeast flavors; with a great roast/hop bitter/sweet balance; and zero acrid/astringent flavors after the finish. Lightly increasing dryness from hop/char bitterness. Medium carbonation and body; with a very smooth, creamy/bready/grainy, and lightly sticky/chalky balanced mouthfeel that is great. Zero warming alcohol for 6.7%. Overall this is a delicious oatmeal stout. All around nice complexity, robustness, and balance of dark/roast/bready malt and light earthy hop/fruity yeast flavors; very smooth and easy to drink with the mildly bitter/drying finish. Absolutely spot on English style example. Nicely rich and complex English malts; with mild complementing EKG hops and fruity English yeast. A very enjoyable offering.

Pours slightly hazy pale golden yellow color with a 2 finger dense and rocky white head with fantastic retention, that reduces to a nice cap that lasts. Thick soapy lacing clings down the glass, with a fair amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big grapefruit, tangerine, lemon, lime, peach, pear, pineapple, melon, orange peel, light pepper/pine, potatoes, cracker, white bread, herbal, and floral/grassy earthiness. Very nice aromas with good balance and complexity of citrus/fruity hops, potatoes, and pale malt notes; with great strength. Taste of big grapefruit, tangerine, lemon, lime, peach, pear, pineapple, melon, orange peel, citrus rind, pepper, pine, potatoes, cracker, white bread, herbal, and floral/grassy earthiness. Moderate pine, citrus rind, peppery, grassy bitterness on the finish. Lingering notes of grapefruit, tangerine, lemon, lime, peach, pear, pineapple, melon, orange peel, citrus rind, pepper, pine, potatoes, cracker, white bread, and herbal/floral/grassy earthiness on the finish for a while. Very nice complexity, robustness, and balance of citrus/fruity/pine hops, potatoes, and pale malt flavors; with a nice malt/bitterness balance, and minimal lingering hop astringency after the finish. Moderately increasing dryness from bitterness. Medium carbonation and body; with a very smooth, moderately crisp, bready/grainy, and sticky/resinous/rindy balanced mouthfeel that is great. Zero warming alcohol as expected of 5.9%. Overall this is a delicious American pale ale! All around nice complexity, robustness, and balance of citrus/fruity/pine hops, potatoes, and pale malt flavors; very smooth, crisp, and pretty refreshing to drink; with the modestly bitter/drying finish. Great balance of juicy and dank Chinook hop complexity; solid pale malt backbone, with no residual sweetness. A very enjoyable offering, and spot on style example. The potato thing is unique, but it doesn't overwhelm anything for the style profile.

Ambar, anaranjada, turbia, de espuma muy cremosa y duradera. Lúpulo en el aroma, pomelo, resina. Buen cuerpo, estupenda de gas, punzante al final. Seca, pero con notas dulces malteadas en la base. Pero amarga, intensa. Herbal, con notas cítricas. Interesante IPA.
