So with a banjo burner, a bunch of industrial-sized kitchen pots and as many buckets as we could find, we jumped in feet first. Once a week, every week. Now, several years later and with a 15 barrel version of said banjo burner and kitchen pots for a brewhouse, we’re befuddling the beer judges and converting the masses. One pint at a time.
Our original brewing system has a long and sordid history befitting our line of beers. It centers on the second-to-last kettle ever built by noted coppersmith Fred Zaft, a handcrafted, solid copper 7-barrel brew kettle originally housed in a nineteenth century bar in San Francisco’s old Italian neighborhood. At one point, the bar had been totally restored to its past glory, replete with a “self-flushing spittoon” under the bar (yes, it was actually a urinal). Unfortunately, we were not able to get the self-flushing spittoon.
If you think our beers tend to cross various lineages, you’ll love tidbits like the fact that in 1951, our current building endured a freight train derailing and plowing into the building. We hope our beer can make that sort of impact on you.

Bottle from Burg Bieren, Ermelo. Aroma is roasted malt with grindy coffee, chocolate, chewy dark malt, touch of caramel, milk chocolate. Flavour is moderate sweet and bitter. Body is medium. Very fine Porter, no fancy bells and whistles, roasty with coffee and chocolate.

12 oz bottle poured, from the brewery. Thanks, Justin! Surprisingly clean and clear golden appearance. Melon hops, some citrus and grassy hops on the nose. Flavor is a bit by and bitter, melon rind, with a gentle juicy follow. Lingering balanced grain and and juicy melon fruit. Overall pretty good, but never what I would have expected from a NE IPA.

Shaker pint draft at The Stray Dog Bar & Grill in New Buffalo, Michigan. The pour is a clear copper orange with a minimal off white head. The aroma is floral sweet, along with some cereal malt. The taste is the bright orange citrus, fruit floral and some fruit stripe gum. The palate is medium bodied with soft natural carbonation and a fruit peel softly bittersweet finish.

12 oz bottle. Pours black with a creamy tan head. Molasses, blueberry, raisin, cocoa, vanilla in the aroma. Very nice cocoa and molasses flavor with bourbon, plus raisin, vanilla, maybe blueberry. Very tasty, though perhaps the blueberry is lost a bit in all the strong flavors.

Nonic pint draft at O’Rourkes in Notre Dame, Indiana. The pour is a dark brown, with a light tan head that falls with a coating of lace. The aroma is caramel malt sweetness and a nice roast. The taste is the clean malt caramel sweetness, moving towards the char roast and finishes dry and clean. The palate is medium bodied, soft carbonation and the dry roasty finish. Tasty.

Fool’s gold? Huh. Okay then. Pours clear gold with a one finger quickly fading head. The aroma is of grainy malt and some fruity notes. Flavor is somewhat sweet with grainy, biscuit malt flavor, a touch of hops, and some indistinct fruity notes. Easy drinking. Decent.

backlog. Pours black with a small tan head. It smells of dark roast malt, coffee, and bourbon. The flavor is of bourbon, roast malt, coffee, chocolate, and booze. It's full bodied with a roasty, bourbon finish. Excellent.
