Description
Solemn Oath was born high above the great expanse of the American West. John Barley sketched out a plan on a return flight from visiting his brother Joe in San Diego. On that trip, the Barley brothers hosted a craft beer tasting party for a couple dozen of their friends. It was on. John put together a full business plan after soliciting examples from breweries he admired across the country and started interviewing brewers. It took one meeting with Tim Marshall, then of Rock Bottom – Lombard, to know he would man the brewhouse. His experience with Belgian-style beers and barrel aging made him the perfect fit for Solemn Oath. Together, Tim and John scouted locations in Chicagoland. They were looking for a space in the middle of a large population with an underdeveloped local craft beer supply. Naperville was the perfect location. Solemn Oath leased space in one of the city’s only light industrial parks and worked with the city council to craft a new liquor classification that would allow Solemn Oath to operate as a production brewery with an on-site taproom. As he placed tank orders and Tim signed hop contracts, John convinced Joe to move back to Chicago to be part of the team. Over the first half of 2012, the team built out the space and in April installed a fifteen-barrel Premier Stainless three-vessel system along with 105 barrels of fermentation, affording Solemn Oath a production capacity of about 2,000 barrels per year. (A barrel is thirty-one gallons.) Before our first brew day on April twenty-first, we signed on with craft pioneers Windy City Distribution and launched with three beers during Chicago Craft Beer Week 2012, including the opening of our Naperville taproom. Our first expansion was completed in January 2013, adding sixty additional barrels of fermentation capacity, bringing our annual volume capacity to about 3,200 barrels. Along the way we’ve made great friends, like Jourdon Gullett, a trained muralist who does all of our illustration work. A mutant baby? Monsters mid-ticklefight? A bad garage-punk band? He’s got a vision for it. And Michael Kiser, a professional photographer in Chicago who tells stories about the world of beer and the beer of the world on his blog, Good Beer Hunting. Without his photographs, this website wouldn’t be half as sexy as it is. Speaking of this website, how about the talented and creative people at Nelson Cash? Killed it. We have other friends we would name, but we wouldn’t want to stroke Greta de Parry’s ego. Of course, we couldn’t do any of this without our distributor and the sales reps who ruin any chance of us getting any work done on Friday afternoons. Or the beer buyers, managers, and owners at the most badass bars and restaurants in Chicagoland. And you. Sampled from the tap at FOBAB 2012. Pours a clear deep amber with a brown head that dissipates to the edges. Aroma has a good amount of pine hops with some sweet grains and vanilla. Flavor has sweet pine up front with some sweet grains, vanilla and a hint of sweet chocolate as well as a hit of boozy bourbon in the finish.

Aroma has a sappy pine note with some sweet bread and bourbon backing. Flavor has the same sappy pine with some sweet grains and bourbon with just a hint of grass in the finish.

Sampled from the tap at FOBAB 2012. Pours a near clear yellowish gold with a white head that dissipates to the edges. Aroma is holy passion fruit that is slightly sweet with a hint of backing Cabernet. Flavor has more tartness from the passion fruit but still maintains sweetness with a nice dryness in the finish. Really worked for me.

4 oz. Draft at Solemn Oath. Deep coppery beer under a thin head. Big malt smell, but with a slightly grassy fresh hop nose (yeah, I know that’s what the description says, but I picked it up myself, too). After two glasses of 9% beers, this one is doing me in. But it does have a lot of malt and some, I think, green hop. Plus a grainy malt note to the end. I’m thinking dry-hopping, but probably not.

4 oz. draft Looks the same as the original Whisper Kisses. But wow! That is indeed white pepper in the nose. And there it is in the taste! Overwhelming that lemongrass they claim is in there too. Oh, wait. Now I detect some lemon on the side of my tongue. Impression is not dissimilar to the citrus notes in a habanero pepper. One of the other patrons said he did not like it, and I can understand not caring for a beer dosed up with pepper. Sounds like a practical joke. But if you’re the adventurous kind of guy who hangs out on RB, you need to get some!

4 oz. taster at S.O. "Plain" saison funk in the nose… I say "plain" because I’ve the white pepper variation in the next glass. Taste also has that happy rustic ale funk and fruitiness of a warm ferment. Not so tart as they claim, but instead some stone fruit and dubbel sweetness.

4 oz. draft at Solemn Oath. Big pomegranate and apricot nose. Hazy gold color, and the thickest head of the four samples poured for me. Taste is similarly solid with tropical fruit, pine & bitterness.

Sampler at Standard Market. Okay, my review gives this beer a ranking: Black in the rounded sampler glass, a thin yet bubbly ring of foam. Dark chocolate milk nose. Taste has a nice sweetness and noticeable alcohol like a cordial. Also chocolate again, and threads of vanilla. The usual bitter stout malt in the background.

Draft at Standard market. I had memories of the E-Ville Imperial Porter Tim made at Rock Bottom Yorktown. This is not that. This is a deep brown, served in a shaker glass, with a thin porter style head. Nice nose of warmly roasted malt. The taste is where the hops appear: Mostly piney, but in enjoyable proportions. Odd little thread of Coca-Cola at moments, part of its complexity. Citrus hop notes later on. But this seems to mostly plays up its malts, with some raisin over a bit of graininess. Lingering malty aftertaste.

Costa Rica Cafe San Louis Alajuela coffee bean version. Served draft in a stemless tulip, $7 at DMK Burger Bar, Lombard. Cloudy yellow white, maybe only slightly darker from the regular Khloros, as I recall. Thin foam around the edge. I just catch a nice Witbier smell, slight lemon, wheat malt. If there’s any coffee present, it’s very light of even in green beans. Taste matches the nose, with the added texture of slightly thick malt. The cute server said some people pick up the coffee right away, some don’t. Hey, this place has servers who like pouring the good stuff!
