Description
Situated in the rural village of Hullavington, Wiltshire, we are a family-owned brewery where quality comes first. Fresh air and abounding countryside provides the ideal setting to produce a perfectly balanced product (Elmers, Mighty Monk and Habit are all award-winning ales). First brewed in February 2014. The brewery changed hands in early 2020.
Flying Monk Brewery began a new chapter in 2020 when it was acquired by the farm on which it is located. This has not only allowed us to waste less – for example, using the by-product from brewing (i.e spent grain as cattle feed) – but we have more time to focus on what matters most: making great beer for our local community.

Cask-conditioned at the Seven Stars, Bristol 7/11/2018. Near black in colour with a thin, off-white, head. dried fruits and milk chocolate, a touch of fudge and toasty malts before a warming finish. Good.

Cask at GBBF 2015 - London. Pours clear, rich gold with a frothy, white head. The nose has light dirty hay, ripe tangerine. Light to medium sweet flavour with notes of pale bread, citrus, pale grains. Light bodied with fine carbonation; good condition. Good balance in the finish, more tangerine, lightly bitter hay, biscuity pale malts. Very good stuff.

Cask (handpump) @ GBBF 2016, [ Great British Beer Festival 2016 ], London Olympia, Hammersmith Road, London, England W14 8UX. [ As Flying Monk Birdman ].Clear medium orange yellow colour with a average, frothy - fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, pale malt, sweet malt, fruity malt, light hoppy, fruity hops, earthy. Flavor is moderate to light light heavy sweet and moderate bitter with a average to long duration, sweet malt, pale malt, fruity malt, earthy notes. Body is medium, texture is oily to watery, carbonation is soft to flat. [20160809] 6-3-7-3-13

Handpull cask at the Marquis Wellington, Leicester. Light copper, clear with a good-sized white head. Lovely nose: seawater, cooking herbs, a touch of citrus, some sulphur. The taste however is a serious sulphur bomb. Tastes like eggy water. Slight carbonation on the palate with an astringent aftertaste. Not particularly keen even if I have to admit it's well-made for the style.

(Cask at Captain Corvus, 20171118) The beer poured black. Its head was medium sized and lightly brown. Aroma had burnt malts, dark chocolate and ash. Palate was medium bodied with low carbonation. Flavours were dark chocolate, burnt malts, sweetness, ash and bitterness. Aftertaste was sweet, burnt and bitter. A rather pleasant porter.

Cask at the Silk Mercer (JDW), Devizes. Mahogany-black with a thick beige head. Liquorice, coffee, mild roast, a little fruit. Dryish. Ok.
