About
Vanaf 26 maart 2020 gaat Hobbybrouwerij Mara officieel verder als Symbiose Brewing / Blending. Ze blijven super kleinschalig zelf brouwen en blenden, door te experimenteren met diverse bieren, lokaal fruit en combinaties met cider, natuurwijn en mede zoeken ze naar symbiose. Symbiose is een samenwerking van Chiel Westra, Erik Drijfhout en Klaas Jan Geertsema. Symbiose Brewing/Blending maakt wilde bieren, cider, natuurwijn en hybride combinaties van deze drie wanneer daar symbiose ontstaat. Hiervoor gebruikt me zoveel mogelijk lokaal en vers geplukt fruit.
De meeste blended bieren worden gemaakt met een grote hoeveelheid spontaan wild bier van Brouwerij en Stekerij Vandenbroek. Dat bier wordt gebrouwen in koperen ketels, gekookt op houtvuur, gekoeld in een koelschip en vervolgens jarenlang vergist en gerijpt in houten vaten.
