Description
For Cyprien, Antoine and the entire Fauve team, the adventure began in Paris in our brewpub "Les Cuves de Fauve", in the rue de Charonne, our location in the 11th arrondissement. which includes a restaurant, a bar and a micro-brewery.
And then in 2021, so 2 years after opening the brewpub, the Fauve project developed a little further south with the opening of a production micro-brewery near Montpellier (more precisely in Mauguio) where we now brews the majority of our beers and which also hosts a cellar dedicated to our barrel-aging program.
We ended 2024 with a bang with the grand opening of a brand new brewery in Vendargues, on the outskirts of Montpellier. We designed and customized everything from start to finish! We created this facility to brew all our favorite beers, with even greater precision and versatility.

Can. A mild haze on this gold beer, small bubbly pale cream colour head. Smooth and slightly viscous palate, good fine minerally carbonation on the back end. Smooth pale malts, pretty sweet, a tad too much for my palate, probably emphasised by the sweet Sabro. Hops bring crisp cooling pine and a fair amount of hop spice. Bright juicy hop fruits, sweet citrus, a little resinous grape, plenty of sweet Sabro coconut and a little ripe pineapple, some forward candy berry fruits on the back end, particularly raspberry. Light hop spicy finish. This is a sweet dipa but, it works, the hop fruits are singing within the overall sweetness. The hop spice stops this from being a sweet fruit cocktail, as does the cooling pine. Engrossing.

Tap at Le Garde Fou. Hazy bright yellow. Lemon, guava, grapes, light oats, zesty, peach. Light sweet and bitter. Over light bldied, slightly dry finish. Nice.

330ml can from L'Ecume des Bieres, Saint-Malo. Pours a light brown with a white foamy head. Aromas & tastes of caramel, syrup, grain & hops. Medium body. Slightly sweet finish.

Christmas Day beer 2025. Medium muddy brown with a thin, creamy head. Big licorice aroma with prune-like undertones. Taste is unexpectedly bitter, almost herbal bitter. Finishes faintly tart and vinous. Full-bodied, mild carbonation. Good.

Slightly cloudy yellowish beer, small creamy white head, unstable, non adhesive. Aroma: a little dank up front, tropical fruits, juicy, some marijuana, oranges, orange peel. MF: ok carbon, medium body. Taste: nice, juicy, good bitterness, citrus notes, orange peel, grapefruit, a bit grassy. Aftertaste: fruity, juicy, citrus, grapefruit, a little dank, ok but not great. Was expecting more from this one.

Imperial Stout Coco barriqué 18 mois en rhum au programme. Cela est plutôt pour mettre en confiance. Au visuel, c'est un noir total qui se présente devant nous, sans mousse et avec une faible effervescence. Le nez est sympathique avec du chocolat, café, du rhum et du chêne. La coco est très légère par contre et plutôt en rétro. A la dégustation, le rhume se fait bien sentir. Un peu trop même car il prend l'ascendant sur le reste. La coco qui était peu développée au nez disparait quasi intégralement. Le sucre est légèrement surdosé mais l'alcool et le rhum font bien passer la chose ! L'ensemble est un brin "dur" et tonique mais se laisse très bien déguster tout de même.
