Description
Wilding Cider is made by Beccy & Sam Leach, of former restaurant fame with their wonderful Bristol restaurant Birch. We are orchard cider makers and farmers, based in Chew Magna, North Somerset. We grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way.
After some years of hobby cider making we went full time in 2018 and scaled up production to 6,500 litres with fruit from our own 4.5 acre orchard and three other orchards around Somerset.
Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
We mostly bottle cider in 75cl sparkling wine bottles and mature for at least a year before release.

Draught at That Beer Place, Chester. Golden colour, thin white foam rim and aroma of apple, fruit, funk. Taste is tangy, tart, juicy, apple, fruits, barnyard funky, with drying bittersweet tannins. Medium bodied, low soft carbonation, dry tart & tannic finish. Nicely drinkable.

750ml bottle for #rgpm. Sparkling, bright yellow golden colour, white foam head that dissipates to a thin rim and aroma of perry pear, fruit, funk. Taste is sweet, tangy, perry pear, fleshy fruity, floral, citric, with leathery funk and drying tannin. Medium bodied, fine carbonation, medium dry peary finish. Nicely drinkable.

750ml bottle from Cat in the Glass for #rgpm. Opened with a pop. Sparkling, golden colour, foamy white head that dissipates to a thin white layer and aroma of perry pear, fruit, funk. Taste is sweet, fruity, peary, hay, some funky notes, with acidity and tannin. Medium bodied, spritzy carbonation, dry balanced acidic & tannic at the finish. Nicely drinkable

Delicious perry, delicate, moderately sweet, refreshing and restrained tang. Has a spritzy, massaging carbonation that goes over well. Clean, lightly acidic finish, some further tart pear, light bitter skin, soft funk. Excellent.
