Bottle: Poured a golden color cider with a nice level of carbonation. Aroma of semi-sweet apples with faint barnyard notes. Dry finish. Drinks very well with a nice mix of complexity.

On tap at L'Espace Public, pours a clear blonde with a tiny white head. Nose brings out gentle wild yeast, crisp apple skins, and some subtle champagne-like effervescence. Flavour is crisp and dry, with champagne-like effervescence, crisp apple skins, and a touch of wild yeast. Bright and dry, with gentle funk. Nicely made.

(750ml 2019 bottle from L'Axe du Malt, Quebec City) Pours clear pale peachy orange with a rapidly dissipating spray of white bubbles and no head. Aroma of musty, tannic and deeply perfumed Dolgo crabapples, leathery Brett, fruit skins, some herbal notes, nicely tart bite to the apple flesh coming through, woody overtones, excellent. Flavour is moderate plus tart, dry and lightly bitter with tart crabapple juice and more of that deep perfumed dried flower/potpourri quality, moderately funky with leathery smoky Brett vibes from the middle on, netural wood, fine tannins, some crisp minerality and a little soft lactic yoghurty vibe. Medium bodied with quite soft but still mouth-filling almost creamy carbonation. Excellent Dolgo cider that highlights the unique qualities of the crabapple, with elegance and drinkability.
