Description
St. Joseph's Abbey in Spencer, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labora (prayer and work), the monks pursue a simple life of contemplative prayer, manual labor and hospitality. The brewery helps support the monks and their charitable outreach. The brewery, being far into the abbey's land, is not open to the public for tours or tastings.

Bottled. A very dark brown beer with a lazing tan head. The aroma has notes of candy sugar, yeast, dried fruits, and malt. The flavor is sweet with notes of candy sugar, prunes, raisins, yeast, malt, and hints of alcohol, leading to a dry finish.

Can. Amber with a cm of white head. Floral aroma w grapefruit, breadcrust, pine needles w a bit of a herbal touch. Rather light bodied. Indeed a bit empty. But the lack of malt presence doesnโ€™t mean itโ€™s overwhelmed by the hops - perhaps the citrus has less dimension but the moderate bitterness works OK. Doesnโ€™t live up to the promising of old fashioned aroma, but pretty good.

Medium brown, great head. Spicy nose, smells like Christmas pine, flavor is a great burst of caramel Christmas. Roasted notes, rounded coffee caramel biscuit background. Excellent!

Hazy brownish. Aroma is chestnut caramel some different nuts rosemary. Taste is the same. A little boozy with creamy sirupy juice. Also a bit herbal finish. Good.

Bottle. Hazy amber color with white head. Aroma is very herbal, rosemary, raisins, a bit boozy. Taste is herbal, rosemary, warming finish, some raisins. Oily mouthfeel with medium carbonation. Quite nice!

Bottle. Not far off black with a dense cm of beige head. Aroma of dried fruit and brioche with figs, golden raisins, light spices. Full bodied. Lots of fruit and some dough but little bottom note. Alcohol well hidden. Spiced bitter end. Some unusual bitter herbal (gruit-like) notes there too. Good.

Smell -weak yeast, malt, Belgian notes, some caramel. Foam -thin, some yeast, faint Belgian notes, acidic tones, and some sweetness. Head is small, creamy orange-white color. Appearance - nice-looking brewer bottle cap, classic look.Hazy orange-red color, but not fully hazy, weak carbonation. From - snifter Taste - malt, acidic tones, some hops, and weak bitterness, but then comes the sweetness. Belgian notes in the background mixed with weak bitterness. Quite ok, but nothing over the top, quite easy drinking.
