Description
St. Joseph's Abbey in Spencer, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labora (prayer and work), the monks pursue a simple life of contemplative prayer, manual labor and hospitality. The brewery helps support the monks and their charitable outreach. The brewery, being far into the abbey's land, is not open to the public for tours or tastings.

To Piwo trapistow przypominalo mi Chimay Blue bylo prawie identyczne w smaku, z zawiazanymi oczami bym powiedzial wlasnie ze to wlasnie to piwo. Niektore niskie oceny mnie dziwia i zastanawiam sie czy naprawde wogole testowali to piwo i rozlewali do kieliszkow trapistow. Bo piana byla spora bezowa o kremowej stroktorze, fakt bardzo malo trwala. Barwa czerwono bordowa z licznymi niepracujacymi juz drozdzami. Metnistosc wiec byla. Zapach typowy dla wina wegierskiego takie skojarzenie z Kadarka mialem, a smak slodkawy troche karmelowy i winny owocowy, truskawki i czerwone porzeczki. Spodobala mi sie ti spora daka ziolowych przypraw, macierzanka, kolendra, anyz. Naprawde bardzo przyprawowe piwo. Ogilnie bardzo typowe zblizone do Rochefort i Chimay ale z posypka suszonych ziol.

Bottle from A Lazy Dog Slightly hazy deep straw that was quite clear until the last bits of the bottle muddied it up. Bubbly white head persists. Floral earthy spicy herbal hops on the nose with a solid bit of sweet bready pilsner malt underneath. The flavor is a solid mix of hop and malt with neither dominating. Sweet bread and earthy spicy herbal hop flavor with light to moderate bitterness. Its a tasty beer, but the body seems quite full for its 4.7% abv almost like its a little under attenuated.

Bottle shared by ippopotamo36 (thanks Alberto!). Corpo medio, carbonazione media. No.

Bottle in Rome-Italy with Mortlach. Clear deep golden clear pour, medium foam. Nose: much bread crumb, almond cookies, soapy a bit. Mouth: signs of oxidation, a bit tired as an IPA, sweet, bergamot, chicory pinch. Decent although not so fresh ---Rated via Beer Buddy for iPhone

355ml bottle [A Trappist IPA - takes still getting used to]. Cloudy, orangey, deep golden colour with average to huge, fluffy, fairly lasting, moderately lacing, off-white head. Resinous, piney, hoppy aroma, hints of orange zest, spruce. Taste is dry, bitter hoppy, piney, minimally citrusy, some resin, orange zest, pineapple, a touch of lemon; lasting bitter finish, soft palate, gentle carbonation. Not ascetical in a strict sense, but a concentration on essential, elementary, simple features.

330 ml bottle into signature chalice, best before 6/30/2018. Pours cloudy opaque dark brown/black color with a 1-2 finger fairly dense and fluffy khaki head with great retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big dark chocolate, cocoa, coffee, caramel, raisin, plum, cherry, berry, peppercorn, clove, toasted dark bread and herbal; with lighter notes of banana, smoke, char, licorice, molasses, and yeast/roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malt, fruity/spicy yeast, and light-moderate earthy hop notes; with great strength. Taste of big dark chocolate, cocoa, coffee, caramel, raisin, plum, cherry, berry, peppercorn, clove, toasted dark bread and herbal; with lighter notes of banana, smoke, char, licorice, molasses, and yeast/roast/toasted earthiness. Moderate roast/char/herbal/pine bitterness and peppery yeast spiciness on the finish; with lingering notes of dark chocolate, cocoa, coffee, caramel, raisin, plum, cherry, berry, peppercorn, clove, toasted dark bread, herbal, light smoke/char, and yeast/roast/toasted earthiness on the finish for a good bit. Great complexity, robustness, and balance of dark/roast/bready malt, fruity/spicy yeast, and light-moderate earthy hop flavors; with a great malt/bitter/spiciness balance, and zero astringent flavors after the finish. Moderate dryness from bitter/spiciness and carbonation, increasing through the glass. Medium-high carbonation and medium-full body; with a very smooth, moderately creamy/bready/grainy, and fairly crisp/sticky/chalky balanced mouthfeel that is great. Zero warming alcohol for 8.7%. Overall this is an awesome Belgian Russian imperial stout. All around great complexity, robustness, and balance of dark/roast/bready malt, fruity/spicy yeast, and light-moderate earthy hop flavors; very smooth, crisp, and easy to drink for the ABV. The peppery yeast compliments the moderately strong bitterness; making this feel pretty spot on for the style, despite being made with Belgian yeast. A very enjoyable offering.

Thanks Iznogud! Shared with him and ogivlado. Misty copper-amber, darker body, lasting off white head. Aroma... anise, heavy maltiness, bit dust, but fresh all over, plum jam. Taste... soft maltiness, honey, creamy, strong, with some cinnamon to boot, nicely integrated with the rest of the taste. Solid strong malt & spice driven ale.
