I am a more recent convert to the world of English cider and love dry, crisp styles with bags of classic English apple character. This love of cider led me to use my winemaking skills to produce an English cider using methods more associated with sparkling wine production. I think the result is elegant, surprising and unlike any other cider being made right now. It has already converted many non-cider drinkers over to the dark side.

750ml wired cork bottle from Darts Farm. Cage off and cork ejected itself, no spillage though. Pours pale yellow gold with huge dissipating opaque loose foamy head. Aroma: white grape, merest apple hints. Taste: firmly dry, light sharp, more white wine vibes. Medium body with spritzy carbonation. It's not cider, it's champagne.

750ml wired cork bottle from Aeble. Gusher on opening. Pale yellow gold colour, big foamy white head that dissipates to a thin layer and aroma of light apple, fruit, white wine & caramel hints. Taste is fleshy apple, fruity, white-wine, woody oak, with some drying acidity. Medium bodied, spritzy carbonation, dry finish. Quite drinkable.

75cl bottle from Sandford Orchards. Pours a deep gold with a lively effervescence. Aroma of schloer, sparkling wine, grape. Flavour profile veers away from cider and seems more in tune with a good cremant or champagne with little tannin or cider apple notes. Nicely sweet, flavoursome, high effervescence but not quite enough apple fruit coming through for a cider.

750ml wired cork bottle from Cider is Wine. Cork self-ejected on loosening the wire with a massive pop and foam out. Sparkling, pale yellow gold colour, big foamy white head that rapidly dissipates away and aroma of fleshy apple, white wine, bready yeast. Taste is tart, tangy, fruity apple, with kiwi fruit, gooseberry, some white wine notes, and citric acidity. Medium bodied, spritzy carbonation, dry finish. Nicely drinkable.

75cl bottle shared with Soph. Clear gold appearance, cremant-level-spritz with an accompanying tart dry apple fruit character, some medium sweet moments. Nice.

750ml wired cork bottle from Scattings. 7.5%. 2017 Vintage. Opened with a loud pop. Sparkling, pale yellow gold colour, short-lived fizzy white foam head and aroma of dry apple. champagne, yeasty. Taste is sweetish, apple flesh, some tartness, white wine, yeast hints, tangy and with citric acidity. Medium bodied, spritzy carbonation, dry acidic finish. Nicely drinkable.
