Description
Having worked for a cider producer in Normandy, I realised that, whilst the UK has a long tradition of drinking cider, the craftsmanship of this industry had slowly faded.

With the knowledge that the best cider comes from great apples, I carefully selected our orchard's varieties and set out to create Novar's unique blend, in the heart of the Scottish Highlands.

In 2020, after years of study, we launched our product: a craft cider with dry, refreshing citrus notes, tannins that deepen its flavour and a light sparkle.

Our goal is to develop flavours in the orchard, not in the cidery. We use the cidery to preserve and enhance flavours that have fully matured over the harvest.

Bottle from Top Cellar. 2020 harvest, enjoyed three months after the BBD of April 2024 (this has been in my cupboard for a while). Clear amber body with microscopic flecks. Steady carbonation. Aroma of dried leaves and apple. Flavour of sweet red apple and a smooth, oaky finish. Thin body with a slick texture. Soft fizz. Mellow and delicious.

Bottle at l'escargot bleu. Pours clear golden, nose is floral, lime, apple, taste is sweet apple, floral, light toffee. --- Beer merged from original tick of Novar Scottish Craft Cider on 09 Dec 2022 at 14:13 - Score: 7

On keg at the Hangjng Bat. Appearance - clear and flat amber. No head. Nose - fresh apple. Stewed too. Taste - stewed apple. Palate - light bodied, dry and tangy finish. Overall - decent.

330ml bottle. Relatively clear gold appearance, sparkling. Nice sweet apple fruit aroma, gentle toffee. Crisp, lightly caramelised naturally fruity character, mild orchard warmth, gentle tannin. Pretty good.

Bottle at home in Hackney - picked up from Cork & Cask. ABV noted at 5.5%. Pours clear honey-gold with a fading, fizzy white head. Light to medium sweet, really pleasant sweet/dry funk balance, some juicy apple, a little apple sauce, nips of wood and musty hay. Light bodied with spritzy carbonation. Balanced finish, light bitter peel, more juicy apple. Really enjoyable.

330ml bottle from Beer Zoo. Sparkling, golden colour, foamy white head that quickly dissipates to a thin rim and aroma of fruity apple, green apple. Taste is green apple, skin and core, with cooking apple notes, some tartness and citric acidity. Medium bodied, light carbonation, medium-dry green apple finish. Quite OK.
