Description
Uncork this bottle to celebrate Scottish apple bounty. Sip your way through secluded walled gardens and forgotten orchards. The time honoured artisan method of keeving is rounded by fermentation in the bottle – Méthode Champenoise. This uniquely Scottish bubbly boasts honeycrisp flavour and yellow undertones. Serve chilled as an aperitif or for your special occasion. This is not cider, this is seidear.

Our cider takes at least a year from harvest to bottle. We take our time, because the results are remarkable.

Our apples come from walled gardens across the North East of Scotland. We have found that small apples from older orchards often release the most interesting flavours, when expertly handled by our seidear maker. Our apples are coming from our own orchard at Cluny Castle, from Haddo House walled garden, and from many small backyard orchards.

Christian is our chief seidear-maker [CSM] responsible for reviving traditional techniques and adapting them to the Scottish climate and its unique apples. Colin is our chief fruit officer [CFO] and knows all about orchards and apples.

750ml wired cork bottle. Opened with a pop. Golden colour, bubbly white foam head and aroma of apple flesh with bready & yeasty hints. Taste is sweet, tangy, fleshy apple, green apple, yeast notes, with some tart drying acidity. Slick mouthfeel, medium bodied, spritzy carbonation, dry acidity finish. Quite drinkable.

375ml wired cork bottle from Strong Water Co. Opened with a pop. Sparkling, golden colour, bubbly white foam head that disspates to a thin rim and aroma of fruity apple, caramel. Taste is tangy, apple, fleshy, some skin and core, with gooseberry, caramel notes, yeasty hints, white wine, and some citric tartness. Medium bodied, spritzy carbonation, drying acidic finish. Nicely drinkable.

Bottle from Marshall's Farm Shop. It pours clear pale gold with a fluffy white head. The aroma is earthy, apple skin, oak, nutty, musty, apple jelly, fragrant, touch of sherbet and soor plooms. The taste is crisp, dry, pleasingly tart, bright, spritzy, lemon sherbet, tart crunchy apple, some juiciness, blossom, vinous, white wine, gooseberry, white grape, refreshers, touch of creaminess and a touch of minerality with a dry finish. Medium body and prickly, effervescent carbonation. Super classy stuff. Nice fizzy white wine character to it. Super impressive.

Taste is tart, tangy apple, some skin and core, sweetish, with citric acidity. Medium bodied, fine carbonation, dry acidic finish. Quite drinkable.

Sample thanks to danlo. Thanks danlo. Hazed gold appearance, murky apple nose. Taste presents a sharp carbonation, tangy introduction, wild tangents, bright crisp character with some sweet apple pie notes. Quite different for a keeved cider.
