Westvleteren Abdij St. Sixtus

Established in 1839
Around 1860 a vast complex of buildings for amongst others sheds, a guesthouse, barns and a second brewery, was built. It remained however a small domestic brewery for personal use. Only from 1878 on production increased due to a good turnover of the tavern ‘In de Vrede’. Between 1886 and 1896 a third brew house, fully operational as from 1896, was built.
On 20 March 1922 the monks started the expansion of the brewery. On 27 October 1927 for the first time steam was used to brew in the modernised, fourth brew house. This brew house was operational till 5 January 1990.
In 1976 a fermentation room with six open yeast vessels and a laboratory were installed. Fermentation in open yeast vessels, a method that is used very rarely, is essential for the ester profile of the Trappist Westvleteren.
The present brew house was officially put into operation in 1990. The new bottling plant was put into operation in 2013. Since 2014, two brews are made per brewing day. This meant a considerable saving in terms of energy consumption and man-hours.
The lagering cellar and the fermentation chamber were modernised and automated, but because the capacity did not change, production also remained unchanged. The production amounts to approximately 6,000 hectolitres annually, spread over 42 brewing days. In 2016 a new secondary fermentation unit with storage space was built.

Dark brown with an off-white head. Aroma is sweet malt and dark fruits. Not quite as sweet as the westy 12. Flavor is a sweet bread tasted with vanilla. Lots of malt, and a great mouthfeel.

Bottle. Pours dark with a tan head. A very complex dark, malty, fruity beer with floral notes. Amazing aroma and flavor fruit, yeast, citrus, alcohol, spices, oak, vanilla, the list goes on and on as flavors change. The best Trappist beer I have ever tasted.

A great beer. Among my favourite 3. The Abt 12 is slightly better (as good as it gets actually). But this is also a fantastic beer to drink. Well crafted in every aspect.

This is probably the best beer I have ever tried (and very likely the best I will ever will). Everything is extremely well balanced. Fantastic tastes and aromas of fruit mostly plum. Great white head. A masterpiece !

Pours chunky into a Westy tulip. Dark golden amber with swirling chunks of yeast. Bottle says 02 12 02 -- so figure the bottle’s over 7 years old. Nice earthy, leather and cellar aroma. Very nice -- another sip...sweet and creamy caramel -- very smooth with a long trappist honey finish.

Bottle. Its a fantastic beer. The best so far. The reason it doesn´t get 5,0 is that the aroma could be a little more powerfull, and the head a bit more lasting . Otherwise this is the perfect beer. You eat it, more than you drink it.

Bottle. Beautiful lasting head. Last drop still had a small head on it. A bit hazy with sediments of yeast. Very complex taste with lots of spices and fruits to be detected. Aroma is almost as good as the taste

Quite a chunky pour. Nice carbonation and substantial medium-lasting head. Bottle cap says 30/07/01, so quite vintage. Aroma of dates and plum. Nice, full flavor with a slight alcohol aftertaste. Bitter, long finish

Bottle at Bier Cirkus. Hazy blond ale with a ultra resilient white head, and beuatiful lacings. Wonderful sweet vanilla, hops and candy in aroma. Wonderfully creamy mouthfeel, with hops and sweet candy sugar coming out beutifully, and perfumey hops covering all the inside of my mouth. Complex bodied. mmmmm...delicious.
