About
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay homage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Hail the goat!

Can to nonic glass.
Appearance: dark brown close to black in color with a one and a half to two fingers of khaki foamy head which slid off at a nice pace to leave some light lace
Aroma: dark chocolate, milk chocolate and a very nice deep roastiness which blends with some bitter coffee beans, then some dark fruity vibes, an added earthy quality comes in further underneath
Flavor: roasty, semi-bitter and earthy sweet combining the prior mentioned aromas; then a mild aftertaste of the chocolates and coffee
Texture: medium bodied, between sessionable and being a sipper; very smooth along my tongue; finishes silky smooth with the chocolate and dark fruits
Overall: a very nicely coffee stout I'd be willing to come back to.
