Description
After studying viticulture and oenology in Beaune, Simon Lecomte sets out on a journey to meet avant-garde winegrowers. He draws on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the development of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of work to rehabilitate the place, he installed his tanks there and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels

12/XI/22 - 75cl bottle @ Billie’s Craft Beer Fest (day 2), BB: n/a (2022-1571) Thanks to all for sharing today’s beers!

Clear pale yellow beer, no head. Aroma: weird, a bit dirty, infected, lots of diacetyl, melon rinds, unpleasant oxidation, smells like one of those badly B.A. De Molen beers… MF: soft to no carbon, medium body. Taste: weird, overripe melons, very sourish, lemony, pretty dirty, unpleasant, don’t like it. Aftertaste: more melon rinds, lemon juice, citric acidity, not a fan of this one.

Muddy orange-ochre brew, no head. Apricot, dried apricots with a velvety aroma, alas threatened by a vinegary background. Sharp, acetic mouth with again the velvet apricot flavour. Sharp, acetic acidburn, and thinning, almost no carbonation. Disappointing to say the least.

Pale, cloudy yellow beer with no head. Vinegar, wine acidity, old winecasks. Sour apple - with the emphasis on 'sour'. Further taste is acetic acid. Acidburn and -thinning, sharp & aggressive, no carbonation. Excellent for a salad dressing.
