Description
After studying viticulture and oenology in Beaune, Simon Lecomte sets out on a journey to meet avant-garde winegrowers. He draws on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the development of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of work to rehabilitate the place, he installed his tanks there and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels

Bottle shared at the craft beer junction bermondsey tasting. Many thanks. A hazed pale petrol gold coloured pour with a a halo of white head. Aroma is soft wheat. Cider, tangy, sour, loose wheat. Palate is pithy citrus tangy moderate carbonation. Solid. Salty peach fuzz. Fizzy.

Original review text: Bottle at home in Hackney - picked up from HOTM. Bottle says 5.0% ABV, Solera III. Pours clear yellow with a quickly fading, fizzy white head. Pleasant aroma, light funk, citric, some oak. Lightly sweet with notes of salty sweat, lemony tartness, oaky dryness, a slight butyric note, acetic bite. Light bodied with spritzy carbonation. Moderate funk to finish, quenching, dry, some acetic burn in the throat, lactic twang. Interesting stuff.

Bottle at CBJ tasting, thanks to Cloin. A light haze on this pale yellow beer, small and very short lived white head. Light palate, fairly dry, decent fine carbonation. Acetic tartness, a little cooling pine. Slightly tart orchard fruits, pear and apple. Whisper of lemon on the semi dry finish. Decently English orchard.

Bottle shared at the CBJ BIG BOOSTY XMAS tasting, thanks to Juan, 13/12/23. Lightly hazed orange topped with an off white head. Nose is tangy fruit esters, straw, herb, apricot tang, barnyard esters. Taste comprises herb, funk, damp straw, tangy green berry, barnyard. Medium bodied, fine carbonation, semi drying close with a light acidic spike. Not bad.

Bottle. Reddish amber colour, minor head. Aroma is Aroma is black currant, red currant, blueberries, some glue and mild tart wooden tones. Flavour is blackcurrant, red currant strongly, some tart and really sourly acidic things.Tasty as such, but bad drinkability due to the acidity.

750ml bottle at home. Slightly opaque golden colour with a thin disappearing head. Aroma and taste are lemony tart to acidic. Some sherry and tannin. Hints of dry finish. Crisp body.

Bottle at home. Pale yellow with almost no head. White grapes, quite vinous, a bit of minerality. Lemon pith.

--Bottled. -- Clear burgundy colour, small pink head. Vinegary black currant aroma. Citric with medium body and rounded mouthfeel. Vinegary citricity, lots of black currant. Intense, but never complex. Low bitterness. Too much focus on black currant, otherwise pleasant.
