Description
After studying viticulture and oenology in Beaune, Simon Lecomte sets out on a journey to meet avant-garde winegrowers. He draws on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the development of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of work to rehabilitate the place, he installed his tanks there and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels

27/4/2024. Bottle shared at fonefan Ulfborg tasting. Pours hazy pink/red with a small bubbly off-white/pink head. Aroma is blackcurrant, hedgerow, light spice and herb. Moderate sweetness, medium sourness, touch salty. Medium body, quite lively. Warming dry spicy finish. Enjoyed this.

Bottle @ Fonefan tasting. Clear red with a small white head. Aroma is dry, malty, black currant and tart. Flavor is quite sweet and very acidic. Dry and very acidic finish. 270424

Frothy white fair mostly lasting head. Red colour. Light malty and hoppy moldy aroma. Moderate acetic light bitter flavor. Average light bitter finish. Oily palate.

Bottle @Ulfborg. Clear red amber, small white ring. Blackcurrant aroma and flavour, a little solvent, quite sour and acidic.

ABV: 6.0%. ✅ Clear light medium red colour with a small to average, frothy - fizzy, mostly diminishing, off-white - pink head. Aroma is moderate vinous, blackcurrant, tart - sour, barrel. Flavor is moderate sweet and light to moderate acidic with a average duration, vinous, blackcurrant, tart - sour, vinegar, acetic, chicken ass, dry. Body is light to medium, texture is watery, carbonation is soft to flat. [20240427]

Bottle @ fonefan tasting. Medium head with medium duration. Color is red. Aroma and taste are blackcurrant, lactose acid, citrus and has a nice sour finish.

Christmas Gathering, 18th December 2023. 5 guys at my gaff drinking beer and talking bollocks. 75cl bottle, cloudy pale body, no head to speak of. Not too sure what to make of this, strange sour/tartness with a kind of vinegar overtone, didn't take to it at all.

75cl bottle @ Christmas tasting in blackhaddock's beer cave. Misty pale golden yellow appearance, thin ring of bubbles circling the glass. Lovely delicate fragrance, although there is a hint of gherkin juice coming through, some lemon and lime, vinous tangents. Fresh, delicate feel overall.

Bottle shared at Craft Beer Junction - cheers. Pours lightly hazed gold with a creamy, white head. Light sweet flavour and fairly sharp acidity, ripening lemon, mild pale wood, soft funk, nips of wood. Light bodied with fine to average carbonation. Tart, quenching finish. Not bad.
